It's a very specific part of the battering process that's supposed to make the crust crispier.

We want a crispy crust on our fried chicken, and dipping it into water, our battered chicken into water, seems like it would make a soggier crust, right?

I also saw SauceEats make a version of this as well, although the methodology there was a little bit different than what Chickenhead25 recommended.

So I'm gonna go ahead and follow the original methodology, and as always, I'll put links down below.

Let's begin by prepping our chicken.

Today we are using chicken tenders or chicken tenderloin.

This is white meat from the chicken, so it's located near the breast, but it is not the chicken breast.

It is the chicken tenderloin, and it's very, very tender.

If you can't find chicken tenders, you of course may use chicken breast and just cut them into smaller pieces.

I really like the chicken tenderloin.

It's beneath the chicken breast, and the chicken doesn't use the muscles as much, so it remains pretty tender.

It does cook very very quickly, so keep that in mind when you are preparing them.

One thing a chicken tender or tenderloin has is this bit of tendon, so that should be removed before you cook it because it can be pretty chewy.

So I typically use

a little paring knife and kind of

hold on to one end and scrape

You can even use the back of the knife because you don't really want to cut the Tendon.

You just want to kind of scrape it out, and I just pull and push down on it so as not to tear the meat up too much.

If you can't get a good grip on it, using a little bit of paper towel can help.

So this is the tendon.

The main part to get is the end right here, and that's what attaches it to the bone, and that is very very tough.

That's the method I was using, just like a little paring knife.

But Chicken Head Twenty Five suggested using a fork.

They take a fork and use that to kind of press against.

That works great.

As long as you can hold on to the end of the tendon, can be a little slippery.

Just use the tines of the fork to kind of guide it out.

But be careful not to rip the meat, because we want our tender to remain.

To make sure our chicken cooks evenly, we're going to just press it out a little bit between some plastic wrap.

You can also use a ziplock bag.

But we're just going to just gently pound it out of it.

These are tender, so don't mash them too violently.

Chicken breasts are a little bit more resilient.

We just want to even everything out, so everything is the same thickness.

You do the same thing if you're making a schnitzel or if you're doing tonkatsu.

Now we're going to mix up some seasoning.

You can use an all-purpose seasoning if you like, and this will season both the chicken and the crust.

So I am going to use.

Half teaspoon of onion powder, half teaspoon of garlic powder.

Let's go heavy on the garlic, and a little MSG.

We're gonna mix that up.

That's gonna be our seasoning.

Chicken Head Twenty Five apparently has their own seasoning, and share the ingredients in the seasoning.

So that's what this is based on.

But I've cooked a lot of fried chicken on this channel, including a KFC Coppa Cat version, a Popeye's mushroom chicken, which was incredible.

Now we're gonna take our seasoning and generously sprinkle that on to our chicken,

both sides, and then with the remaining seasoning we're gonna add that to our breading,

so everything will be tasty.

Now we're gonna make our seasoned flour for the dredge.

So our seasoned flour is gonna be two parts regular all-purpose flour, unbleached, which is what I typically have.

One part cornstarch.

My mom also uses cornstarch in her batter when she makes.

She actually makes fried shrimp, and she uses cornstarch.

Sometimes she uses rice flour, and we're gonna use one part cornstarch, and we're gonna add our seasoning.

To that, and one teaspoon of baking powder.

That'll give us some extra loft.

Mix that together.

In terms of seasoning,

Now we're ready to dredge and fry.

Since my chicken tenders are relatively small, I'm going to use a smaller pot so we can have a deeper amount of oil.

So heat this.

I'm using peanut oil, and we're going to heat it to about three hundred and fifty, three hundred and seventy-five degrees.

If you don't have a thermometer, you can also just use a little bit of the flour or batter and just drop it into the oil.

Prepare a chicken.

When you're doing any kind of battering, there's definitely a process, kind of like a assembly line.

So we've got our seasoned chicken and flour.

In this bowl, I'm gonna crack a couple of eggs,

and I'm gonna add a little salt and pepper to this.

So this is gonna act like our glue and stick it onto our chicken.

So let's do the typical first.

So we're gonna take our seasoned chicken and dredge it into the flour, shake a lot of the flour off.

Now the reason why we're doing this is this will give us a dry surface for the egg wash to stick on.

So just very light coating, right?

Then we take the chicken, dip it into the egg wash, back into the flour.

And you just drop that into your oil.

But other recipes I've seen to get a thicker batter, you dredge it in again to the egg wash

Now a little trick I've seen,

I think I learned it from Kenji, and you add a little bit of your

Now when you dredge it, shake it off, and you should get nice craggy bits.

So we'll put typical, shake excess off.

Now let's try the water method.

Taking the chicken into the flour.

Now here's the wild part.

Now we take this and put it into the water just for like ten seconds.

So we're using water rather than the egg wash for the second coat.

That's the water dipping method.

So for comparison, that's the double egg wash, and that's the water method.

So I've seen two methods: just a single one-second kind of dip, and then Chickenhead also does a longer dip.
