Today on Ask the Old House, I'm going to take you on a journey inside your disposal.
You can't put anything in there.
That's right.
People think they can.
People think they can just throw anything down.
So we've got some samples of some different foods.
In Baltimore, I'm going to show you how to build your own rain valve for under forty bucks.
And beer is one of America's favorite drinks.
Would you brew it home?
So we're going to show you how to turn this into this.
That's next on Ask the Old House.
次は「Ask the Old House」です。
Kev?
Yep.
うん。
Back here you are.
Yeah, yeah.
I heard you doing a story on home brewing beer.
Better believe it.
I'm cleaning my bottles right now.
I got to figure out the recipe, and I'm going to make myself some beer.
Well, I brought you some ingredients for your beer.
That's one of my ingredients.
That is a hop rhizome.
You're going to plant it at your house, preferably in a sunny location with a trellis, because this is going to want to grow up eight to ten feet tall.
Can I plant that little twig?
Little twig.
And then in the fall, this is what you're going to get.
Look at these beautiful hops.
Smell that.
Oh yeah.
That's what's going to make my beer taste so good.
Oh, I like that, Roger.
All right, I got to put that one in my backyard.
Get these bottles.
What have we got going on here?
A little coffee clatch, boys.
Coffee clatch.
Going to make some beer, home brew.
What do you got some twigs on?
What's that?
This isn't a twig.
This is a hop rhizome.
Looks like you could use a little bit of water.
If you know what I mean.
Maybe Tommy can help you.
He's on a Baltimore doing a water story.
What do you mean?
Thank you.
Cheers.
Today we're heading to Baltimore, a city famous for its row houses.
This is the Federal Hill neighborhood, and these homes date back more than a hundred and twenty years.
Hi, Eulie.
Yeah.
Welcome to Baltimore, Tommy.
Thank you.
Nice to meet you.
Thanks.
Is this your unit?
This is our house.
Well, I like it.
It's really nice, and I like the fact that it's an end unit, so I suppose you have some nice natural light getting in there.
Yeah, the light is great.
And there's one more great space I'd love to show you.
Come on inside.
Love to see it.
Let me show you the deck we have off of our second floor.
Okay.
This is nice.
Oh, nice size deck.
It's nice and high.
This is great.
Yeah, we get really great sun from the south, and we also have really nice views of the church tower over there.
Right over there, very nice.
So, who's the gardener?
I love to garden, and I have a lot of pepper plants and herbs.
I can see that some jalapenos in there.
This is great, nice and spicy.
Mhm.
And I see you also recycle.
Yes, we do try to compost for anything we trim from here, and also some biodegradable food scraps.
Well, that's great.
Now I know you wrote me about a rain barrel, so you obviously need water for your plants.
Yes.
はい。
And I see you have one.
You have a damaged one here in the corner.
What happened to that?
So we we didn't cover it over the winter time.
It filled up with water and froze.
The ice will definitely do some damage.
Yeah.
So I see that you have a downspout connection here, but it's not connected.
Yes.
はい。
So every summer we would unscrew that and hook this up to it precariously, and and that would be how we got water to the rain barrel.
And how do you get up there?
Have a ladder.
Well, my husband would usually stand up here and reach over, and I would hold my husband's pant belt loops.
Stand up here, you get twenty twenty five feet here.
That doesn't sound like a very smart way to do it.
It was not.
What would you say that if I helped you make a rain barrel?
That would be awesome.
All right.
はい。
Well, let's get some stuff, and we can get started.
All right.
はい。
All right, at least here's your barrel.
Great.
Now this is a reclaimed, food rated barrel.
Okay.
All right.
はい。
Now, what do you think it was used for?
Take a look for that.
Fruit punch.
Fruit punch.
That's pretty good.
It's actually a soda bottling company, and I actually bought this barrel.
How much do you think it was cost?
Fifteen to twenty bucks.
Good guess, but only five bucks.
Wow.
All right.
はい。
So now we have to think about getting water in and getting water out.
So to get water out, I'm going to use this right here.
This is a boiler shut off, and I paid seven bucks for it.
So what we're going to do is going to drill a hole right in the bottom of that and screw it into the barrel.
So we're just going to start the hole right here.
We're going to drill a one inch hole because the outside diameter of our valve is one inch.
Okay.
To make a watertight seal, we use thread sealing tape.
Now I can just screw the valve into the barrel.
Okay.
All right, we put a tap in the top of the barrel, and that's going to be our inlet for the water to get into it.
But now we have to figure out how we get water off the roof into the barrel.
So what I did is I went online and I bought this diverter right here for twenty-five bucks.
There's actually a filter in here, so that if any debris that comes down the downspout hits the filter, bypasses it and goes down the downspout down below and doesn't go into your barrel.
All right, so what we're going to do is we actually have to cut a section of the downspout out.
We'll insert the diverter, connect the tube to the diverter, and then the water will go into the barrel.
All right, so now I got to cut a piece of the downspout out.
You want to hold my belt?
Sure.
Just kidding.
All right, so now in the winter time you want to save this cap because you're going to want to remove the hose and cover that.
But in the summer you remove it and connect the hose to the diverter.
Now just connect this to here to the barrel.
All right, Elise, I put a little bit of water in it so we can charge the barrel up a little bit because it looks like we're going to get some rain.
Okay.
Want to try putting your water can under it?
Yeah, let's get some water out.
Look at that.
見て。
There it goes.
出た。
Wow.
Fill that up and you get all your watering done.
Yeah.
うん。
Now you want to make sure in the winter time you open up that silcock to drain all the water out and disconnect the infeed from the diverter and plug up that hole.
Okay, we'll be sure to do that.
Thank you so much for coming down to Baltimore.
Really.
My pleasure.
And happy watering.
Thank you.
So Richard, the holiday season is upon us, and everyone is out, merry making.
But for you, it's a busy time, isn't it?
There are only two people you don't want to be around the holidays.
One is the turkey, and the other is the plumber on the day after Thanksgiving or the holidays.
A tough day for you.
Yeah, a lot of food goes down.
It's the most used day of the year for a kitchen, so I thought we would talk today a little bit about the basic disposer.
Now this is the most basic one right here, and this is a cutaway so you can understand what goes on inside.
Water and food stuffs go down here.
Just below here is the upper chamber.
Here's the discharge from the dishwasher if you have it, and that comes into here.
Now when you turn it on, the motor will spin this grinding wheel.
This is a single grinding wheel right here that'll shred the food and throw it down through the drain right here.
Now there's some safety features down below that many people don't know about.
Right here is a reset button.
If the motor ever overheated, this button would trip and you'd have to push it in, and that sometimes will do it.
And also many of them also come with a wrench, and that's designed to go right here and then turn to try to clear any stoppage or jam that's up here at the top.
Yeah.
うん。
But sometimes that's not enough, and you can take a couple of broom handles or stuff like that and come down through the top of the sink, put them in opposing directions against those teeth right here and try to clear it, okay?
And you're using that because obviously you would never stick your hand down in there.
And that's an important safety feature never with the power on.
You're saying this is the most basic why?
Because it's just a small.
Everything.
It's the smallest motor, one third horsepower.
It has a single grinding wheel, and the fact is it's the cheapest model on the market, so that's what most people end up with.
But they go up in size, and this moves up to the largest size right here.
This is one horsepower versus one third horsepower.
This has three grinding wheels, so it really pulverizes everything, and this thing is super insulated and quiet.
So this thing will grind up just about anything.
Right.
はい。
Just about anything, but not actually anything.
Right.
はい。
So I brought some samples of some of just some of the stuff that goes down.
No, we need that.
So have you ever been inside a disposer?
I haven't.
All right.
Well, here is your disposer right here.
The way we activate it here is an air switch.
You always want to run cold water when you do it, okay?
We have a clear trap underneath so you can see what's going on.
We'll start with potato skins.
People think these are a problem.
No problem.
No problem.
What do you think about carrots?
Don't put them all down at once and just let the cold water run so they can grind up and move through.
The tricky part is anything with strings.
Celery, particularly long strands of celery, you certainly want to cut them.
And some of the basic disposers, raw meat will get you too.
The meat itself will get caught in the grinding wheel, and the bones can jam it up.
reach your hand into the power's off, which is really important.
But you see, that's just bouncing that around.
It's it's just pulverizing, but it's not grinding up.
It's only got the single wheel.
And over time, you might get through, but it's going to end up down the drain a little bit.
So you really just need to know the less of what can and can't.
Yeah, don't try to overtax the machine.
And also, the pits inside of peaches or avocados.
I mean, people will do this and throw that pit down there, and that is literally the pits.
Just spin it around.
Ironically, the biggest culprit is not the hard stuff; it's actually liquid grease like this.
An important rule is to always run cold water when you're working around grease.
Why not warm water so that it flows like liquid?
Well, now it goes down into the horizontal pipe that might be in the basement.
It then can gel, and now it sticks to the sides of the horizontal pipe.
But the best way is not to run any grease down there if you can help it.
So with a basic disposal of grease, bones, pits, and the stringy stuff, that should be okay.
Absolutely.
Good information, and you know what?
You just earned yourself an invite to your counter holiday table tonight.
Nice.
Over the years, we have shown ways to grow our own food, maybe in our own backyard, from citrus stories to hot chilies, even making our own honey.
Well, today we turn our attention to beer, and we've actually invited Bridget Lancaster into the room.
Hello, Bridget.
So nice to see you.
Thanks for joining us.
So you are from America's Test Kitchen, right?
Cooks country, and you guys dig into the ingredients and the recipes, but also the science behind the food.
Right.
But in this case, for beer, I hear you're also a home brewer.
That's right.
About 20 years.
Wow.
We've really picked it up, my husband and I, over the past five years.
So we've got a lot of beer in our basement.
We're brewing all different styles now.
So why your interest?
I guess better yet, why this interest from everybody sort of in terms of growing our own and brewing our own?
Where does that come from?
Well, we're curious.
We want to know what's going on.
We want to know the ingredients that are going into all of our foods.
That's why we're baking bread, making beer, and other things, growing vegetables at home.
And also, we like to see the process of going from grain to beer at the very end, cracking open a beer that you made yourself.
It's pretty sweet.
Well, I'm curious about the history of beer because it has really been around almost forever, right?
3,500 BC, Mesopotamia has the first mention of any type of beer-like beverage, and it probably happened naturally.
A little bit of bread was mixed with water, grabbed some yeast spores from the air, you get fermentation.
So it was very thick.
People drank it through a straw, kind of gross, but it would leave all of that sediment far behind.
And these are three here are ales.
Now these are more modern ales.
We're not going to have to drink these through a straw.
Right.
Now ale yeast is what separates this from lagers, which we'll get to in just a moment.
So ales and lagers those two categories of beers.
Basically, everything falls into one of the two.
That's right.
All right.
では。
So ale yeast is a top fermenting yeast.
That means that you'll see some of that yeast rise to the top, and you'll get little bubbles on it.
Right.
Ale likes to be brewed at a pretty warm temperatures, so sixty to seventy-five is a pretty natural range.
Okay.
And ale has kind of very nice flavor.
It's very round.
You'll see it often described as floral or bitter.
Right.
Yeah.
はい。
You can smell it.
The hops is part of it, and really gives it that sort of floral smell.
And you should really get it from that one.
Okay.
So those are in the ales.
That's right.
Now for these three, this is an American pale ale, and the British are actually the founders of the pale ale.
But Americans started brewing it in the nineteen eighties when we also started growing our own hops.
Now this is pale ale's cousin.
That is an IPA or an India pale ale, and that's a beer that's born out of necessity.
The British had to figure out a way to get their pale ale from Great Britain all the way to India so that it survives the journey.
So they packed it full of hops.
That acted as a preservative, but it also gives tons of that bitter and floral flavor in around.
So this one I think of as a stout, but you're saying that it's technically an ale.
That's right.
It uses an ale yeast, so it is an ale.
Porter is very similar.
Now stouts were made in the seventeen hundreds in England and in Ireland, and the difference is the type of grain that's used.
Very dark, so you have chocolate malts, barley that's toasted or roasted, and you also have brown malts, so you get that kind of caramel sweetness.
And then the lagers.
What distinguishes them from the ales?
So it uses a lager yeast.
That is the main difference.
Okay.
And it's also bottom fermenting, so you don't have that push up to the top of the bottles.
Lager likes a nice cold temperature when it's fermenting.
Don't we all?
Forty-five to fifty-five degrees is the absolute max, and it takes longer to make a lager because cold does slow down the fermentation.
So this one, even though it's clear, very familiar to us, actually is harder to make because we want the cold, and it takes longer.
Yeah, that's that's exactly right.
All right, great information.
I'm going to continue my education by seeing all this stuff made in a brewery.
Perfect.
Thanks.
Cheers.
Cheers.
Hey Alex, nice to meet you.
Nice to meet you too, Kevin.
Appreciate the invite to the brewery, and you guys got a pretty good story.
We do.
We were started by a trio of friends back in two thousand twelve, who were working desk jobs during the day, but they decided that they really wanted to start brewing at night.
All right.
And then decided to go pro.
All right.
Well, homebrewers going pro is just what we're looking for.
Can we see the operation?
Definitely.
Let's check it out.
All right, Kevin.
So this is our production facility, and where we start making the beer is with our four main ingredients.
We've got yeast, hops, water, and grain.
That grain comes in on pallets.
After we decide on our recipe, we then bring it over to our grist mill.
This is where we're going to crush it into a mild grind.
And what grains are you using for this one right here?
It's a saison.
We've got four different grains: got rye, barley, oats, and wheat for this.
Different grains means a different recipe, which gets you a different beer.
Different beer, different flavor, different color.
And then to make sure we get that grist right, we don't want to grind it down to a powder.
We want it to just be a light crush.
Going from here to there, going from here into the silo, and then from the silo, we're going to head through this auger all the way up and into the mash tun.
So, Kevin, now we come to our mash tun.
This is where we're gonna add our second ingredient—a whole lot of water.
So we're gonna add the water at 148 to 158 degrees, really depending on the style of beer we're going for.
So what is the warm water doing with your grain?
The warm water is mixing with the grain and allowing us to extract all the fermentable sugars that the yeast will then eat later.
Once the mash has sat for about an hour, we then drain out that resulting liquid we call wort and transfer over to the boil kettle.
All right.
よし。
Once in the boil kettle, we're gonna bring it to a boil and start our hop schedule, which is usually about an hour.
The more we boil those hops, the more bitterness we get.
The less, the more flavor and aroma.
So the hops is ingredient number three.
The hops are ingredient number three.
And once the boil is through, we're gonna rapidly chill it through our heat exchanger down there.
That's when we're gonna transfer it over to the fermentation vessels.
Once in the fermenters, this is where we're gonna add our yeast, and this is where fermentation begins.
This is about a ten-day to three-week process that the yeast is gonna eat all those fermentable sugars, create alcohol and beer.
Along through that process, we're gonna make sure the temperature is just right, and we're gonna check up on the fermentation process.
Right now, you can see this is pretty cloudy still.
This is not quite ready to transfer and to drink, although it is starting to look for the first time a little bit like the beer that we're gonna get eventually.
It's definitely getting there.
You can smell it.
Smells really nice.
Lots of hops in that beer.
This is gonna be an IPA.
Actually, smells a lot like beer.
So our homebrewing setup is almost identical to what we saw inside.
Okay.
You can get all of your ingredients online or at your local homebrew shop.
We're gonna start off right with the pre-milled grain, nice and easy.
Then we're gonna move over to those hops.
So pellets in this case.
Yep.
はい。
Pellets.
Hops stay fresh longer.
Aroma.
香り。
Yep.
はい。
We've got our water, which is heating up right over here on our propane burner.
Okay.
And then we're going to, of course, need our yeast, which we kept in the fridge to make sure it's nice and healthy.
All right.
よし。
So same ingredients and those big bats.
I mean, I'm looking at different things here, but I recognize this, right?
Propane burner with a big lobster pot, cooler right here.
One of these, these two, and these two are just like those big stainless containers we have in there.
This is where the fermentation is gonna happen.
Gotcha.
So the first step inside was mixing grains and warm water.
You got it.
So we can do that right now.
If you can grab that bucket right there, get the hot water ready for us.
Dump it all right in before the grain.
So how many gallons of water are you using?
This is about three and a half gallons.
And the temperature?
About 152 degrees.
Next step is to add our milled grain.
We always want to add this to the water, never the other way around.
Why is that?
We want to make sure we avoid any clumping.
Okay.
Next, we wanna give it a good stir.
We wanna mix this all up real nice.
It's all evenly distributed.
So this mix right here, this is what you guys call the mash.
That's correct.
Once we let this rest for about an hour, we'll have wort.
But first, we've got to cover it up, keep it warm.
Okay.
There you go.
できました。
Perfect.
Now we wait.
So while the mash has been resting for about an hour, we've got some more water in another pot up to 180 degrees.
Okay.
Can lift that off for me.
We're now going to add our sparge water, which is going to help us rinse all those sugars off the mash.
This is about four gallons of water.
Okay.
Once this is full, we're going to cover it and let it rest for about 10 more minutes.
Thank you.
Now we can drain our wort from our mash, and the wort is just the liquid, the mash, the grains they get left behind.
That's correct.
We want to keep that all out of the boil kettle.
Once we get all the wort in here, we can bring it to a boil.
Start adding our hops.
So the coolers that I find at the store don't have a fancy valve like this.
A little bit different.
We unscrew the plastic valve that was on there, put on a ball valve pipe fitting, and we got a little flex tube here.
All right.
So anyone could do that.
Super simple.
Nice and cheap.
Now that we have our wort at a boil, we're going to boil this for about 60 minutes and start off by adding one ounce of hops right at the beginning.
And the hops.
This is where you add the flavor.
Yes.
はい。
So our initial hops that are going to be boiled the longest are going to add all our bitterness.
The hops we add in later are going to add a lot of flavor and aroma.
And each addition of hops is how much?
About one ounce, and we're using three different hops for this brew.
Our next addition of hops will be when we have 15 minutes left in the boil.
The final addition will be right at the end.
Now that the flame is off, we want to cool this down as quickly as possible.
So we're going to dunk it in a bucket of ice.
We're going to want to let it sit in the ice until the wort is chilled to about 62 degrees.
Once the wort is down to 62 degrees, good to give it some time to settle, and then we're going to transfer it into our fermenter.
We have to make sure that after the boil, everything this wort touches is sanitized.
So that includes this bucket and this siphon right here.
All right.
よし。
We can get that siphon going.
Something you can buy off of the internet or at a brew store.
Absolutely.
We're going to get our auto siphon going, trying to leave all that sediment behind.
Look at that, just flowing.
How easy was that?
Yeah, nice and simple.
Now that all the wort is transferred, if you can hold that for me.
Yep.
はい。
We can add our yeast.
How much yeast?
That's about ten grams that we just put in.
We're gonna seal it up right away with our special lid here, the fermentation lock.
This thing right here.
これです。
That's right.
That's gonna allow the CO two to escape.
Okay.
We're gonna give the yeast two weeks to break down those fermentable sugars, and then we'll have beer.
Awesome.
All right.
よし。
Well, we appreciate the tour, the lessons, and in two weeks I'll be back to pick up our beer.
We'll see you then.
Thanks, Alex.
Thank you.
That is a good story.
Yeah.
Home brewing is hot.
Oh yeah.
Really catching on.
Matter of fact, I got the bug.
So as soon as that was over, I well, I went back into try some more.
Just kidding.
I went home, I brewed my own batch just for you guys.
This is O'Connor Irish Red.
That's right.
That'll be a big seller.
You know what?
We're gonna have to put that up against something that I've been doing for quite a while.
You brew?
Yeah, Silver Stout.
Oh, you kidding me?
I used to think it was Stout.
I had no idea.
Oh, you do?
Yeah, I've been doing plumbers pale ale.
Plumbers pale ale.
Oh, it's flying off the shelves.
