Hey, I'm John Canell, and today on Prep Your Kitchen, we're making a delicious, buttery, perfectly sweet pandolce.
So let's get started.
Into the bowl of your stand mixer, you're going to add three quarters of a cup of warm milk, 105 to 110 Fahrenheit.
Our key ingredient here is yeast.
We're going to use two and a quarter teaspoons, or one packet of active dry yeast.
One and two and a quarter.
Our yeast are going to be hungry, so we're going to feed them with a quarter cup of granulated sugar.
That's 50 grams.
Pandolce is made using a very enriched dough, meaning there's sugar, but there's also fats in here, which create a soft, lovely texture.
We're going to give this a quick stir.
The only trade-off here is that your rise time will increase.
If you're doing pizza dough, it's like 45 minutes, half an hour, and it's doubled in size.
This is going to take longer, but it is well worth the wait.
So good.
Set this aside for about five minutes until it's nice and foamy.
If there is no foamy head, your yeast was not active enough, and you have to start over again.
After five to ten minutes, you'll have a lovely foamy yeast situation happening in your bowl.
Now we're going to add three eggs in, but I would not crack them in the bowl directly.
You would never find a shell here.
So, into a small bowl, crack three large eggs, room temperature if you can.
No shells.
Eggs will give us some richness and a little bit more structure.
I'm also going to add in the remaining quarter cup of sugar, an additional 50 grams.
So this recipe has a total of one half.
A teaspoon of vanilla.
And for contrast, a teaspoon of salt.
Grab a whisk.
And a copy of Happy Kitchen Everyday Baking, and mix this up.
『Happy Kitchen Everyday Baking』
This smells so good.
It basically smells like the finished product, because you have that yeasty smell plus the vanilla.
Now we're going to add the flour in parts.
First, we're going to add some of the flour and create a paste, which will make it really easy to mix in additional flour and butter.
Two and a quarter cups.
That's two hundred and seventy grams.
All-purpose flour.
Getting close.
You know, pundlesey is one of those things that I thought was actually not a try.
Like, I did not like pundlesey.
Because I only had it from bakeries, and when you get it from a bakery, almost every single time it is shockingly stale.
So I was like, "What is this hard stale bread everyone likes?
" And I'm half Mexican.
Like my mom is from Mexico, so culturally, you know, I should be there.
Eventually, I had some requests to make the recipe, so I developed a recipe for this, and it's one of my favorite baked goods.
It is reeking of vanilla and butter, and it's so soft and pillowy on the bottom with a crunchy topping.
It is perfection with a cup of coffee or hot chocolate.
Perfection.
We're gonna get this mixed now so we have a nice smooth paste.
And by the way, if you like my videos, hit that subscribe button.
There's two new delicious recipes every week.
Unlike making a cake batter, mix your heart out.
It doesn't not matter because we want to develop the glutinous structure.
For some added richness, we're going to add half a cup or 113 grams of unsalted melted butter, melted and slightly cooled.
Mix that up again.
Butter makes everything better.
Nice and silky.
Now we can add another two and a quarter cups or 270 grams of all-purpose flour.
You see, right now I'm using a scale, and it is so easy to get perfect results.
If you're using a measuring cup, make sure that you fluff your flour up in the canister, sprinkle it into your measuring cup, and level it off.
If you scoop flour, you're packing it in and adding so much more than you need, which gives you a really dense, bready baked good.
Great, I'm done working for a moment.
My mixer is gonna take over.
Pop your bowl on and grab a dough hook.
We're gonna mix this on low for one minute until we have a shaggy dough.
One minute later, I have a nice shaggy dough.
It has no structure.
It's falling apart, and it looks like a train wreck.
But that's what we want.
And by the way, this recipe, like almost every other recipe, will be much easier if you mise everything out.
So that means you read the recipe through.
You have everything prepped and ready.
So you're not gonna stop and melt your butter, but your butter's been melted and is ready.
You have your milk nice and warm.
Everything is right there at your fingertips.
After this minute of mixing, we're gonna scrape the bowl down and then get back to mixing.
We're gonna go back to mixing now, but this time on medium low for five to seven minutes, or until I have a smooth, beautiful dough.
My dough's been mixing for about five minutes now, and it's time to take a check.
Here's the deal: you want to add as little flour as possible to have the perfect structure.
If you add too much flour, you're just turning a delicious baked good into something that's bready and less appetizing.
If you have too little, it won't have enough structure and it won't bake properly or have the right texture.
So we're giving the minimum amount with those two two and a quarter additions of flour, knowing we might need to add more.
The first check is use your clean finger, press down, and if the dough is tacky, meaning it's it feels sticky, but it doesn't stick to your finger, that's a good sign.
If it's sticky, And sticks to your finger.
We need to add more flour.
This is not sticking to my finger.
Well, right now you could add up to a quarter cup of flour if needed.
This dough is not sticking to my fingers, but I wanted to have just a little bit more pull away from the bowl.
So I'm going to add in a tablespoon or so of flour while mixing.
Sprinkle it in.
You'd be shocked what a spoonful of flour will do at a step like this.
It's like a night and day difference.
So now, after that one tablespoon of flour, it has so much more pull away from the bowl, and it looks much better.
This is ready to go onto the next step, which is a nice long rise.
Grab a large bowl, lightly oil it, and we'll have a nice cozy place for our pan dulce to rise.
This is Lachlan and George's like favorite little bready snack too.
By the way, it's so good.
Although Lachlan just likes to eat the crunchy part off the top.
Just gonna roll this over one time, loosely cover, and we're gonna pop this into a warm, cozy place to double in size, one and a half to two hours.
In you go.
After about an hour of rise time, we're gonna make the delicious topping for this pendulce.
Specifically, they're conchas.
By the way, I didn't even mention that earlier.
They're called conchas because one of the ways you can cut the topping is like a conch shell.
I will show you that, but there are tons of other ways too.
Into a large bowl, I'm adding one cup or about 120 grams of powdered sugar, along with one cup plus two tablespoons of all-purpose flour.
That's 128 grams.
Perfect.
Grab a whisk and give it a nice mix.
I have half a cup or 113 grams of very soft unsalted butter here.
It's not melted, but it's beyond room temperature.
You can see it's quite nice and pliable.
Take little dots of it, and we're going to add this into the bowl bit by bit.
I'm mixing a bit as I go along, so the butter doesn't glom together.
I think traditionally the sugar topping is a favorite part of the conchas.
So it's sweet, it's crunchy, it's often colorful, and you can flavor it in different ways.
I will say that I worked very hard when I developed this recipe to make the conchas so soft, pillowy, and sweet that the sugar topping is really close competition for your favorite part.
Okay.
はい。
The key ingredient here is a tablespoon of vanilla.
We're being very generous.
You can use a fork or your spatula, and to start mixing this together.
Now, the goal is to have a nice, smooth paste.
That's why we want the butter so soft.
And as you work, you're kind of smooshing the butter into everything else.
So you're taking these little nodules of butter and smooshing them so it creates a paste.
And honestly, you can use your clean hands and work it together too.
It's a bit like making a pastry dough, except more sugar, more butter.
I'm enlisting my butter wrapper just to kind of tighten it up into a ball.
Your conchas could all be the same color, but that's a bit boring.
So let's divide this in half.
Half of it can stay a pale vanilla color.
The other half, we're going to use some food coloring with.
I like to have these as pink.
It's a traditional color, and it looks quite cheerful.
Three drops of food coloring might do.
It really depends on the food coloring you use.
This is the ultra powerful gel food coloring.
Don't use your hands for this.
They'll be permanently stained.
Just mush it up, mashing and stirring until the color is evenly mixed in.
Oh my gosh!
This smells so good.
The vanilla comes through.
Of course, you have choices here.
You could add a dash of cinnamon for some extra flavor, or a tablespoon of cocoa powder instead of food coloring, and just mix it in.
You might need to add a couple drops of water with the cocoa powder just because it can be a bit dry.
Grab a length of plastic wrap, and we're going to cover these so they don't dry out.
They dry out quickly, so you be careful.
Wrap well and store in a cool place until you're ready to use.
If your topping looks a bit lumpy, like it's come together but it's not quite there, just pop it onto your countertop, and you can mush it up and roll it back into a ball a couple times, and it'll be nice and smooth.
There, that looks nice.
It's been about an hour and a half, and my dough has doubled in size, which means it's time to start dividing it.
If it hasn't doubled in size, just give it some more time.
It might need an extra half hour or so.
Little bit of flour for your work surface.
Dump the dough out.
I also have two rimmed baking sheets lined with parchment paper.
Divide your dough in half to get started.
Half again, and now we're going to divide our quarters into thirds.
So much math here.
And they don't have to be exactly the same size.
Just do your best.
One, two, three, two, three.
You can pinch some off if you have one that's extra small.
Right now we have these misshapen loaves, not acceptable.
So you're gonna grab the edges of it and pinch together.
Flip it upside down, and onto the unfloured part of your surface, you're gonna make small semicircular motions with your hands cupped together.
Your hand cupped together, and now you have a beautiful tight bun.
This is exactly the same process if you were making dinner rolls.
You're gonna place these onto your rimmed baking sheet lined with parchment paper, six per sheet with about three inches apart in between, and just repeat that process for the rest of your dough.
Pinch together, and I'll pinch together a few times.
Flip it upside down, and I have my index finger and my thumb touching, with a cup forming around.
This part's really important because it also helps build up some structure in your dough.
If it's hard for you to roll it on the counter, you can also do this in your hands.
So start once again by pinching the edges to form like a dumpling shape.
Then flip it upside down on your palm, and it's that same action, but it might be a bit more comfortable for you.
If you have smaller hands, your fingers shouldn't really touch.
There's going to be a gap.
This is so satisfying.
It's really difficult to explain because it's quite tactile, and the dough is so soft and buttery.
It's nice.
My first tray is done, so I'm going to cover it with plastic wrap right now, loosely.
Pan dulce is a broad category of baked goods.
They're sweet breads.
There are many different kinds.
This, the cluncha, is probably the most popular and well known.
But there's pan de muerto.
There's so many others, and some are for special occasions.
Some are for every day.
All of them are delicious, and I really encourage you to try and explore the beauty and wonder that is Mexican baking.
This dough tends to dry out pretty quickly, so don't take too many breaks.
If you do need to take a break, cover loosely with some plastic wrap while you, like, take a call or attend to your child's needs, something like that.
Here's one that I had cut a little bit too small, so I added some pieces of dough onto.
Just find a smooth edge that becomes the new top.
Engulf all those extra bits of dough and roll as usual.
Last piece.
You'll feel the ball tightening up as you do this, and the dough starts off so soft that this is a really important step so it maintains that bun shape.
See, covering that up while I attend to my toppings.
Unwrap your topping, one at a time.
If you divided your topping into two separate pieces, you have six of each, twelve in total.
You'll want one and a half tablespoon-sized balls for each top.
Sixty-three, sixty-two, sixty-three.
63、62、63。
Yeah.
そう。
Scales enabling your Virgo tendencies.
Once divided, roll into a ball in the palm of your hands.
And now you're going to work this into a flat disc.
I cut and lightly flour some parchment paper, and now you can place your disc in between and flatten up a little bit more.
You can use your hands or a rolling pin and roll this out into a four-inch-ish circle.
If you want it to be perfect for some reason, grab a four-inch circle cutter and cut that shape out.
Uncover a couple of your rolls.
Carefully remove your topping.
And drape that over the top, just like that.
You'll want the topping to almost touch the tray, but not touch the tray.
So there could be a little bit of a gap or a larger gap.
But if it's touching the tray, it's just going to melt and create a puddle.
So you can trim as needed, recover, and then continue.
At the end, we'll cut them all.
Flatten in your palm.
Try and maintain a circle shape.
Transfer onto a piece of lightly floured parchment paper.
Gently roll it out.
It should be about four inches in diameter and a sixteenth of an inch thick.
But that's a little bit persnickety, so just look for a four-inch circle.
And make sure you re-flour your parchment paper as you go.
This sugar topping is quite sticky.
Recover and continue.
Change direction as you roll.
Use gravity to help remove from the parchment and recover.
The same thing goes for the pink or the chocolate, whatever you choose to do, or the cinnamon.
Don't get too stressed about this looking perfect, as I often say.
We are all home bakers in our kitchen.
This is not a professional bakery, and I guarantee this will taste better than any other one you've had.
It's okay if it's visually imperfect or if it's a work in progress.
I like using these circle cutters just because it helps guide me.
I'm horrible at seeing what four inches is exactly or a perfect circle.
And if you see that your balls are a little bit smaller, so there's too much drape, you can just do a shimmy like this to tighten up the circle and make it a bit smaller.
Conchas are, as we discussed, a Mexican specialty, But they have a lot of French influence.
Remember the French were hanging around Mexico, maybe a bit too much earlier on.
And you have lovely French brioche, like these buttery, rich doughs, being introduced into Mexico and then made Mexican with different variations.
So the sugar topping is almost similar to like a cruller, but things have been adapted for local tastes.
And you have a totally new creation, which, in my opinion, this is my favorite brioche ever.
It's a it's a pandolce.
Last one for our first tray, and you can see I'm trying to like just fix the ripples at the edge.
Our pandolce could go into the oven right now, but they would look a disaster because the second rise that we're going to do would make these expand.
They would expand more in the oven, but our sugar topping would just be breaking.
To control that, just like sidewalks.
Have those little lines where they should crack.
We're going to make little lines in the sugar topping that are decorative, but also will control the expansion.
So grab a very sharp small knife or a lame, and we'll get to work.
So many choices.
Two of the top traditional ones are the concha, which is a shell shape.
For that, you'll make a small semicircle at one end, cutting just through the sugar topping, and then from that semicircle, you'll have rays of lines to create that signature shell shape that you could sell by the seashore.
The lines start at the semicircle and spread out, so they're narrower towards that end.
And definitely sharpen your knife just before doing this.
You'll be so much happier.
Another shape that's quite common is a simple grid.
Very easy, lovely for expansion, and it looks great.
For that, you'll just make crisscross lines, somewhat evenly spaced.
You can also try just pressing with your knife as opposed to dragging.
You really just need to cut through the sugar topping, and if you drag, you'll create little tears.
You can let me know in the comments what some of your favorite patterns are.
Things I've done before would be like little hearts all around.
There's you can do faces, the circles, polka dots.
The list goes on.
Just try and have fun with it, and don't get stressed.
These conchas will disappear so quickly, but they'll last for three days in an airtight container at room temperature, or three months if frozen.
As you work, you'll get more and more confident, and these will go by very quickly.
The first few are going to be slow rolling.
My main advice for you is not to drag your knife too much, even if it's quite sharp.
It's going to look messy, even if you're using a bread lame.
It's going to be messy.
But if it's messy, it's not the end of the world.
They're still delicious.
Once your first tray is done, loosely cover it.
We want to have room to rise.
We're going to let these rise for about thirty minutes or until they're well puffed, and you will see dough in between those lines.
While they rise, preheat your oven to three hundred and fifty, so it's nice and hot and ready to accept your conchas.
The first batch that I made is ready to go into the oven.
They've puffed considerably.
I see gaps through the sugar topping where the dough is exposed, and they can bake away three hundred and fifty for eighteen to twenty minutes or until the bottoms are a nice golden brown.
You're gonna love the way these smell.
So beautiful.
As soon as your conchas come out of the oven, transfer to a wire rack so they can cool.
Otherwise, they'll be steamy and soggy on the bottom.
And once they're just slightly warm, they're ready to enjoy.
This is pure vanilla indulgence, and the bread itself is so soft.
It's softer than you could imagine, but this hard sugar topping is crunchy.
So you get soft and crunchy with nothing but vanilla, and it is just plain delicious.
