Hey, I'm John Canell, and today on Preppy Kitchen, we're making an amazing salted caramel cheesecake for my new book, Everyday Baking.
So let's get started.
First off, set your oven to 350, and now we'll make the crust.
In the bowl of a food processor, we're gonna add one 8.8 ounce package of biscuit cookies.
That's 250 grams.
These guys have a lovely spiced flavor, and they're so much better than just graham crackers, in my humble opinion.
If you don't have biscuit cookies, or you just don't like them, you could replace with ginger snap cookies or graham crackers.
You're gonna end up with one and a half cups of cookie crumbs.
Break them up if desired.
We're gonna process this until they're nice and finely ground, about 30 seconds to a minute.
My cookies are finely processed, so it's time to add in five tablespoons or seventy grams of melted unsalted butter.
You're gonna drizzle this in while pulsing.
Whenever I'm making a cheesecake crust, I like to remove the blade and with a small spatula, just give it one final mix.
You'll find that butter pools in weird places, and you'll have dry patches.
So one mix, and you should be good to go.
This smells amazing.
I love it.
This cheesecake is gonna be really creamy, nice and light, but filled with caramel flavor, and there's caramel drizzled on top as well.
It's so decadent and delicious.
If you take a look at the texture.
You can see it's like fine wet sand, and it'll hold together if you squeeze it.
Now grab a nine-inch springform pan, give it a quick grease, just lightly.
Transfer your cookie crumbs.
Give this a little shimmy, and using a flat-bottomed glass or measuring cup, we're going to press down and work one inch up the side.
The most commonly asked question on the first two book tours is, "When will you make a book that's just baking?
" Listen to you, and book three is here.
Everyday baking has just baking recipes.
There's over a hundred, almost entirely desserts, and there are so many delicious things that I really hope you get a chance to try.
There are links in the description box below so you can grab a copy.
I hope you get a chance to bake along with me with your own copy that's hanging out in your kitchen.
My crust is nicely compacted.
And ready to go into the oven.
I placed it onto a rimmed baking sheet, and now you can bake for 10 to 12 minutes or until it's nice and fragrant.
In the meantime, we're gonna get everything ready for the filling.
Paddle medium low, two minutes.
Creamy, smooth.
I love having a book that I can read.
While my crust is baking, we're gonna make the filling.
However, once that crust comes out of the oven, we're gonna let it cool for 20 minutes.
So remember that we're not gonna pour things directly in.
Into the bowl of my stand mixer that will be fitted with a paddle attachment, I'm adding three 8-ounce blocks of room temperature cream cheese.
If your cream cheese is too cold, you'll have lumps and things won't mix as nicely.
It won't be as silky smooth, and especially in a flavored cheesecake, you will see those lumps.
Make sure we mix everything nicely and use room temperature ingredients.
Pop your paddle attachment on.
We're going to mix this up on medium low for about two minutes or until it's smooth and creamy.
Don't forget to scrape the bowl down.
While that mixes up, let's crack three eggs into a small bowl so we can be sure no shells go into our creamy, delicious cheesecake.
One, two, and three, with no shells.
This recipe calls for half a cup of caramel inside of the batter, as well as more caramel for drizzling on top.
And you have a choice here.
You can make an easy homemade caramel, and that recipe is in the book.
I also have an easy homemade caramel on the channel.
You can click up here for that, or you can just go to the store and buy a thick caramel sauce.
Both will be delicious.
Please note, a thick caramel sauce is thick.
It is not the pourable kind that you have in those squeeze bottles, like for on top of a sundae.
They're different.
It's been about two minutes.
This looks pretty smooth and creamy.
I'm just gonna knock everything down on the bowl.
Things have a tendency to just creep up and up, and they don't get mixed nicely.
When you make a cheesecake, it's really one of the easiest things to do because you bake it, it comes out of the oven, you chill it, and you can slice and serve.
You do not need to decorate it.
There's no assembly required.
Now we can add in many other delicious things, starting with half a cup of sour cream.
That's 120 grams.
Sour cream is going to give you a lighter cheesecake with a little bit of tang, and it just is a magical ingredient here.
I do not like a dense brick-like cheesecake.
I want to be smooth and melt in your mouth like a creamy cloud, and sour cream is great at helping you with that.
To sweeten things up and give us more notes of caramel, we're using half a cup of packed brown sugar.
That's 110 grams.
And for even more caramel flavor, half a cup of thick caramel.
175 grams.
Look at that.
Mmm, smells really good.
For some structure, I'm adding three tablespoons of flour here.
I like to just sift them in just to make sure there's no lumps.
One, two, and three.
One tablespoon of vanilla.
And for some contrast in our salted caramel cheesecake, half a teaspoon of salt.
You could be a bit more generous if you want to.

There's two new videos every single week.
It's time to mix this up on medium low until everything's nice and smooth.
It'll be about a minute, and I might scrape the bowl down, especially since there's like caramel and stuff hanging around on the side.
If you ever see things are hanging around in your beater, knock it onto high for one second and bring it right back down.
The centripetal force will move it out.
Yes, we're really scrape the bowl down here because we added everything in all at once.
Continue mixing.
If at this stage you're noticing there are some lumps, your cream cheese might have been a bit cold.
That is fine.
Everything will be okay.
I would mix for an additional minute or two at medium low.
You're not going to do anything bad here.
So a little bit more mixing, and then we can go on to the eggs.
Once everything's nice and smooth, we can reduce to low.
And add in our eggs one at a time.
By the way, if you have a copy of my book, you can leave a message and let me know which recipe you'd like to see a video for next.
There are definitely some favorites I have, but I want to hear what you want.
Time for the next egg.
Yeah, this book has everything: muffins and quick breads, yeasted breads, breakfast bites, cookies, bars, cakes, classic desserts, air fryer sweets, pies and tarts, stir together cakes.
It is fully comprehensive and has so many of my favorites all in one book.
And our last egg.
This looks great, by the way.
Scrape the bowl down.
And as usual, every recipe has a photo.
I hate it when there's a photo missing.
I want to see what it will look like when it's done.
Super silky smooth.
This looks great.
I'm just gonna run the mixer for thirty more seconds.
Since I scraped the bowl down, I don't even think it needs it though.
Once this is nicely mixed, we can set this aside and be ready to pour into our cooled crust.
Perfect.
It's time to pour.
So get to work.
This looks so nice going in there.
Very satisfying.
I love that color too.
Give this a little shimmy so it levels out.
When you bake a cheesecake, your enemy is air, specifically little air bubbles throughout.
So it's a good idea to give this a couple gentle taps onto the counter lined with a kitchen towel, so bubbles can surface.
This will give you a smoother cheesecake that's creamier and that's less likely to crack.
You'll notice we're not using a water bath for this recipe.
Generally, I have perfected my cheesecake recipes, so they do not need a water bath unless they have a special difficult ingredient, like pumpkin, for example.
Yeah, so I notice some little bubbles coming up.
Great.
Back onto our lined baking sheet, and our cheesecake is ready to go into the oven.
350 for 15 minutes, then reduce the temperature to 300 and bake an additional 30 to 35, or until it has just like a little bit of a wiggle.
If you give it a bit of a wiggle, in you go.
Once your cheesecake is done baking, turn the oven off and leave the door closed for one hour.
Your cheesecake needs to cool slowly so it doesn't crack.
After that hour, remove it, let it hang out on the kitchen counter for about an hour to come to room temperature.
Then loosely cover and refrigerate for at least six hours or up to three days.
Once your caramel cake is chilled, it's ready to slice and garnish.
We're not going to serve this plain.
It needs more caramel, more salt, and little love.
Give it a slice.
I have an additional half cup or 175 grams of the caramel.
I'll be pouring this on top of my slices as I serve them and sprinkling with some flaked sea salt.
And just like that, it's ready to enjoy.
That is such a perfect symphony of flavors.
Those biscuit cookies at the base, mmm, crisp, lovely, full of flavor, and there is caramel throughout.
Creamy and it melts in your mouth.
I hope you get a chance to make this delicious recipe from my new book.
