No, this is
not the smell of food. It's already coming out
Wow, oh, amazing, it's super aggressive
Long time no see

I'll toss it

As always, I'm doing my daily ramen healthy lifestyle, and this facility I've visited several times, inside the store, the moisture-proof building's
building, and I film here every time, but today we have this guest. Sorry, thank you. Thank you. From the Homemade Ramen Research Group
san. Always appreciate it. Yes, I'm Kanda. Nice to meet you. About once a quarter, yes, about that often we've had Kanda-san on, and
well, each time he's granted my unreasonable requests. Yes. And moreover, usually in about an hour with ingredients you can buy at the supermarket
his technique as the head of the Homemade Ramen Research Group who can make authentic ramen is being tested, or
a full-fledged ramen using ingredients you can buy at the supermarket in about an hour
There's something like that, but this time I made an unreasonable request for a rich
Tonkotsu Buta Musou, a
そう
Yeah
shop that sells it for that price
called Rich Musou Ramen, a
priced ramen. I've actually done a project recreating this ramen once. Yeah, yeah. I think I've seen it. Yes. We put it on YouTube, and after a while it even appeared as a convenience store microwave noodle, but once again, Kanda-san,
with just the impression of this rich tonkotsu buta musou
I wondered how much you could make
What an unreasonable request
this time
Usually it's one take, right, yes. But this time, we had you send a prototype in advance
Actually, there's no actual Rich Tonkotsu Buta Musou restaurant, right? Just given the shop name
and making it as is, a new challenge, but this could work, the prototype worked so
Kanda-style Rich Tonkotsu Buta Musou, please. Please. Thank you
I wrote down the ingredients a bit. Yes. And it's for two servings. I've roughly divided it, but for prepping the soup we'll use this. Yes. Pork and Soumi Shantan and
soy sauce, mirin, and then pork kakuni
Kakuni goes in? Yes, kakuni goes in. Kakuni. Kakuni. Yes yes yes. And by the way, this is not chashu. In the end
it's not to top as chashu. The kakuni becomes the soup. Eh. And well, water and. Yes. And this
we'll prep using a rice cooker. You make this in a rice cooker? That's right. Yes. While making chashu
we'll make the soup-in-progress, something like that. I see. Yes
and I've written a few things to add for finishing the soup. I see. Low-fat beef, well we've used it many times, low-fat beef slices, well this is like beef extract
Since it's Tonkotsu Buta Musou, I have an image of tonkotsu shoyu, so to add a bit of shoyu feel there, well, sashimi soy sauce
rich sashimi soy sauce and
and to add umami, Ajinomoto and sugar to slightly adjust the flavor
we'll finish the soup here. Probably since it's Tonkotsu Buta Musou
I just imagined it must be simmered for quite a long time. When I picture a rich tonkotsu ramen simmered for a long time, I
think it's the pork smell
and I wanted to properly bring that out, so
I want to bring it out firmly with the aromatic oil. I see, I see. When thinking about how to produce that pork smell, cracked natto
That's it. Yes. After all, I think that's a fermented smell. To reproduce that smell with fermented food, with natto. And moreover it has to be cracked
Why? Crushing it, cracked is smellier
Is that so, that cracked
is fermented in that state so it's more fermented and smellier. Yes. Also, similarly a fermented food, fish sauce. Fish sauce is pretty smelly. It's fairly smelly, right
We'll fry these two not in lard but in salad oil. Fry them? Before frying, add fish sauce to the cracked natto
and knead it. Knead knead knead. It smells really bad. Then add salad oil to that and knead again
and then slowly, slowly fry it in a frying pan
to make the aromatic oil, well, doing it with natto and fish sauce
doing it. Seriously. This transfers aroma more easily with vegetable oil than lard. Really? Yes, so I made it with salad oil, not lard. I see. Plus back fat
I'll go for it. Seriously. You see, vegetable oil picks up aroma more easily than lard. Really. So I made it with salad oil instead of lard. I see. Plus back fat
to give it that kind of feeling, and since this time we're using ingredients bought at the supermarket and making it in about an hour, back fat
isn't sold at supermarkets, so sometimes there's pork belly with a ton of fat, you know those pork belly slices. Right. Yes. I'll use this a bit as a substitute for back fat
Fresh pork back fat
to use as the oil. I see. Well, other than that, noodles and such, I think store-bought is fine for this area. Also long green onion and shredded chili pepper. Right. Shredded chili pepper
is like there's hair in the ramen. Yeah. Well, there's that joke. I see. So when I recreate that joke, I add a bit of that shredded chili pepper
I garnished it a bit like that. It's not hair, but I expressed that hair being in there. I see. I see. Right. There's this push and
I'll bring shredded chili pepper for that
I haven't prepared it
I just came to buy it at Sumakabu earlier, so
I came to buy it. I came to buy it. Yes
Every time I make it I always prepare a flavor-change item. Right. I'll make a flavor change with pickled red ginger and garlic
Ginger and garlic. Yes. This, you know. We call this shogani-n. Shogani-n or
something like that. Right, right. Shogani-n. Shogani-n. Shogani-n
is what I'd like to make this time. I'll be building it like this, so please look forward to it. Yes
I've already started boiling water, so the water is about 600cc, so
this is about 360cc, so
well, well
a little less than two cups, I guess. It's started
I think, to get that out with just meat in one hour is a bit difficult, so I'll put in all of this broth from various countries too. All of it
I'll use it. Even the juice
I'll use even the juice. Deep-fry this plain
I'll do. Is plain deep-frying okay for this. Plain deep-frying is fine. Yes. Then the soup is already underway with this. The soup will be done. Seriously. Yes
It takes about 40 minutes to finish cooking, right. In the meantime I'll prepare the other things. Let's make the aromatic oil. Oil. Sasa fragrant oil
It's sasa fragrant oil. Since a while ago it's already kind of
smelly, isn't it. It's in there. It stinks. First, this natto and this fish sauce. So, first this natto
half a pack, and I'll knead this. Natto smells too, right. Yes
The aroma is coming. It's already getting really natto-smelly, isn't it
Certainly it smells more than regular natto. It does. The smell. Right. Here I'll add the pungent fish sauce. This
うわ
Ugh
Fish sauce is delicious, though. Yeah. A little is fine, but when you add a lot, it stinks. It stinks. So please add it. Oh, I don't like this anymore. Ugh
やば
This is bad
これ
This
doesn't smell like food anymore. Stinky, stinky
It's super stinky, and so it's well mixed, and it's taken in air and become stinky
And here, salad oil, oh this is oil. Salad oil
I just added salad oil. Huh
I mixed this too, I've never done this food. By the time you mix it, the oil is already picking up the smell, right
By mixing it well, after all the goal is to infuse the smell
And with just this it becomes mucus oil
so it won't become aromatic oil, so I'll heat it. What is this
Won't it give off a crazy smell, I mean it will, it's bad, how do you get that fermented smell out, and if you could simmer pork bones for 2 or 3 days it would come out, but fermented smell
how do you get it out in 1 hour, and the answer I arrived at was this, and moreover it has to be something you can get at the supermarket. Right. When I was prepping it at home, my daughter came home
and glared at Papa, you know
Like this, the heat is gradually getting in
The aroma is already quite a lot
It's coming out, right
Unless you make this oil really strong, if it's just a little stinky it will lose. It loses. I see. It can't beat a rich soup, it loses. This time I made the fermented smell
There's a bit called the terrible complainer's Susuru TV
you know. Yes, yes. When I first made it, I had no source material at all, but like, it's this kind of ramen, starting from what I'd been eating, Tonkotsu Nuki
so I started making it from there, so actually what do you do, given this theme to make that ramen, since its true identity isn't clear
There's also a part where you can decide for yourself, so I think there were both difficult parts and easy parts. Interpretations can vary from person to person. That's right. Also, in terms of my defensive range, between chintan and paitan, I'm more of a chintan person,
I'm good at it. No, that's not it. Yes, I'm good at it. To use a baseball analogy, between infield and outfield, I'm probably suited for the infield. Infield
Yes, yes, yes, yes. Why baseball,
I don't really know,
The aroma is coming out. Already quite,
And when a little heat gets in, the aroma changes too. A little, but it calmed down earlier, yes yes yes yes yes. That good,
A fragrant, savory aroma, right, a savory feeling. Let's wait a bit with this for now,
はい。はい
Yes. Yes,
The aroma of the chashu,
Earlier I said I'd substitute pork belly, but,
Instead of cooking it through, I'm thinking of chopping it finely and topping it on the chashu, but in this state it's too soft to cut finely. Ah, is it that method? Yes, yes, yes, yes
I think something metal like this is good. Plastic doesn't conduct heat very well, so a plate is fine too. Ceramic also conducts heat relatively well, so
And, stick it on like this,
Into the freezer,
I'll put this in. Well, probably 10 to 15 minutes,
If you leave it, it'll freeze. It'll be half-frozen. Since it becomes waiting time, don't waste this time. It's a race against the rice cooking time. Yes,
During this time, do all the prep,
Finish it,
Garlic and ginger. Yes. And,
Mince them. Yes. Crush and,
Chop them,
They sell finely chopped red pickled ginger, but I want to chop it even finer than that. From here, that one is big. Correct,
But. Right. Right,
Shou. Correct. There's not, right. There wasn't. It seems like it exists but it didn't. Yes. This is Jirakken special. Shokanin. It's Shokanin. It's Shokanin,
What is Jirakken? Well, homemade ramen research group, abbreviated, I call it,
Jirakken. Yes. Quite,
Is it going well so far? It's going well. After that, just cutting the green onions, I guess. Oh, already, is that so,
Recently, really at home, you know,
I was just making it and having my family eat it or having friends eat it, yes. That got on TV and many people saw it and there was a response, yes. Recently,
I'm doing ramen classes, yes yes yes. About twice a month, so when I announce this too, in about a day it quickly becomes full, fully booked,
And there are offers from magazines and TV, really thanks to making it, the scope of making has expanded quite a bit. Thank you,
You were transferred alone to Nagoya, right. And when you were on solo assignment, mame miso, that black miso, you know. I was fascinated by that and developed a ramen with it,
I named it Aichi Mame Miso Ramen,
I wanted to leave it for the world, so I applied for trademark registration and it was approved this time. Oh, congratulations. Yes. I'm not running a shop myself, but,
Using the trademark and that recipe, shops that will serve Aichi Mame Miso Ramen are now,
I'm actively recruiting, so. Yes. Yes,
If you'd like to try making it,
Please come to the recruitment page, please. It's an amazing new initiative. Yes, it is. Sorry for the announcement. Now let's cut the green onions. Yes,
Well, it's for two servings, so,
For tonkotsu, it's not white negi, here I brought together green negi, it's all-purpose negi, but,
I feel like if it's too thin there's no eating sensation. Not too thin. A bit thicker than negi. Yes. So I chose and bought these. Among those I was choosing at the supermarket, as much as possible,
I chose ones that aren't thin and bought them,
Yes, yes, yes, yes. This was quite difficult to chop finely. No, that's right,
Quite,
It's cooking up nicely. Nice smell is coming. Indeed, the aroma is really coming out. It's coming out. It's amazing that it smells like ramen,
Soy sauce goes in. Amazing aroma comes out. Somsianta goes in. It's become a good feeling, so I'll,
Strain this,
Wow,
すごい
What. Fried natto. Fish sauce fried natto. Yes, yes, yes, yes. Fish sauce fried natto. This fried natto, how,

This, right. It's pork chintan. The chashu is done with this too. It's done. Done with this. Amazing. Since the soup is rich,
if the chashu is rich it'll turn dark, so that's why I used a redder kata-roast.

the umami of the flavored oil goes into the noodles, the noodles also get umami. I'll warm the bowl a bit while bringing it closer to the burner. Warming it. Yes.
My interpretation is that Tonkotsu Buta Muso has a rich soup, so I thought it has to be a sturdy noodle, a noodle that can hold up to it, so I chose this extra-thick noodle.
Noodles.
Yes. So with this, a thick, rich soup like you'd buy at a shop, and chewy, hearty-textured noodles, that's, I see. One keyword. I see. So my interpretation

So, I won't put the soup in first, this time I'll put the noodles in first. Because the soup is rich, you know.

Right, this. And the umami is properly in there. Ah, so that's why. So even with a rich soup it doesn't lose. It doesn't lose. Right. Yeah.
Super.
It's delicious. This is delicious. With such a simple preparation.
It ends up tasting like quite authentic braised pork, you know. And the ginger remains, and since it's not that fatty, it goes well with this soup. Right. These noodles are really delicious too. Yeah, I made them, so

Mix this in too. Ah, well, enjoying it a little. Ah, I see. Yeah
while mixing. Yeah. Ah, delicious. There's definitely a flavor change. Garlic... wow. This is crazy, white pepper. Glad we put it in. Really with this
Delicious. Wow. This is, it's delicious, right. Yeah. It can't not go well. This is delicious. The soup is a bit sweet, so it has quite a bit of saltiness in it too. The sourness kicks in
And the spiciness of the garlic is just perfect, all of it. Delicious. The balance is good. The balance is good, isn't it. Right
You might add these things individually, but you'd probably never add them all at once, right

No, delicious
So delicious. I really made it again along the theme this time, but
I pay a lot of attention to the overall balance, but the balance was good, wasn't it. The balance was good too. Yeah. I think the point is that it's rich yet properly well-balanced
If any one of them were too strong, right. If they all stand out, you can't eat it, right. That's right. The soup and noodles go together. And the toppings properly complement them. And
the green onion properly has its role. The menma has its role
And, the nori has its role. Yeah. Of course the chashu has presence too. But it's not overdone. And as you eat through to the end, you can change the flavor and
sourness or spiciness
or, a bit of saltiness comes in, and it's perfect. Seriously too perfect. Thank you very much. No, thank you for the meal. Thank you very much
Um, and thank you for today as well. Thank you very much. It's a strong point. Since Kin-san himself doesn't really know what tonkotsu butamuso is, that's how he's making it, so I wonder if it fits properly into where Suzu-kun imagines tonkotsu butamuso to be
That's right. Pretty close. I see
I see. Amazing. Really. With home equipment and ingredients bought at the supermarket, this overnight... and
