Hello everyone.
Welcome to the Japanese Podcast Journey.
Today
Thank you for listening again.
Um,
I don't know if you're swaying on a commuter train right now, or doing the dishes, or relaxing on the sofa, but let's explore Japanese culture together and have fun today.
はい。
Yes.
Well, the theme we will look at in detail today is manners at Japanese restaurants, that is, rules for eating.
I see, dining manners.
That's right.
What do you think when you hear about Japanese dining manners?
You probably have an image that the rules are detailed and strict.
Yes, you might feel a little anxious, afraid you'll get scolded if you make a mistake.
But please don't worry.
After listening to today's talk, that anxiety should completely disappear.
That's really true.
When you hear the word manners, it sounds like a list of prohibitions, like don't do this, don't do that.
It feels like that.
Well, it's easy to think that way.
But our goal today is not simply memorizing rules.
Not memorization.
はい。
Yes.
Every rule always has a cultural background or reason for why you do it that way.
Knowing the reason is what matters.
Yes.
Today, together with you, we will dig deeply into the Japanese heart and way of thinking that lie beneath those surface rules.
If you understand the reasons, you won't feel nervous at all when you travel to Japan and enter a restaurant, right?
Exactly.
You'll be able to enjoy your meal from the heart.
That's wonderful.
So let's go step by step, imagining the situation where you go to a Japanese izakaya or restaurant.
はい。
Yes.
First is the scene of entering the shop.
Yes.
Please imagine it.
You are standing in front of a very lively izakaya with glowing red lights.
You can smell delicious yakitori.
That's right.
When you open the door, you hear a cheerful voice saying 'Irasshaimase'.
Inside the shop is full of energy.
And right in front of you there is an empty table with no one sitting at it.
はい。
Yes.
If you go by instinct, you'd want to just walk over and sit down at that seat, right?
That's right.
If you're hungry, I completely understand wanting to sit down right away.
I would want to sit down right away too.
But this is the first point.
In Japanese restaurants, even if you find an empty seat, you must not sit down on your own.
Oh, is that so?
はい。
Yes.
It is common to stop in the entrance area and wait for a staff member to guide you by saying "this way, please."
Wait a moment, please.
Even though there is a completely empty seat right in front of you.
Yes.
You must not walk toward it?
Yes, you must not.
That is because the staff are assembling the balance of the whole restaurant like a puzzle.
Like a puzzle?
That's right.
For example, guests with a reservation may arrive in 10 minutes for that seat.
Ah, I see.
Or they may want to gather customers in a specific area for a new staff member's training.
So there are the restaurant's own circumstances.
はい。
Yes.
So it is important to wait a little at the entrance until you are asked how many people are in your party.
That is cooperation with the staff who are trying to run the restaurant smoothly.
Exactly.
You could say it is cooperation with the first hospitality.
If you know you are not just being kept waiting, the time waiting at the entrance can be pleasant.
Yes, I would be happy if you felt that way.
Now, you have been safely guided to your seat by the staff, and the delicious food you ordered has been brought to the table.
It is finally time to eat.
はい。
Yes.
But here, before picking up your chopsticks, there is an important greeting, right?
Yes, that phrase.
That gesture of putting both hands together neatly in front of your chest and saying "itadakimasu."
That's right.
I have also in Japanese dramas.
I have seen it many times in dramas.
I thought it was just a greeting meaning "let's eat."
When studying Japanese, you often learn that "itadakimasu" is a mealtime greeting like "Let's eat" in English, right?
Yes, that's what I learned.
But actually a much deeper meaning is hidden in it.
A deeper meaning?
Yes, broadly speaking, two kinds of gratitude are contained in this word.
Two kinds of gratitude.
What is the second one?
The second one may be easy to imagine.
It is gratitude to the chef who made the delicious food in front of you.
I see.
And gratitude to everyone involved in this meal, such as the farmers who worked hard to grow those vegetables and rice.
That is a very wonderful way of thinking.
A feeling of thank you to the people who prepared the meal.
Yes.
Then what is the other gratitude?
The other one is a deep gratitude that greatly changes your perspective.
Changes your perspective.
はい。
Yes.
It is gratitude for the lives of the ingredients we are about to eat, such as meat, fish, and vegetables.
The lives of the ingredients?
That's right.
Pigs, cows, and fish give up their lives to become our meals, don't they.
Wow, that's shocking.
In other words, "
The true meaning of the phrase "itadakimasu" is, yes, I humbly receive your life as my own life
It is an expression of a very humble spirit toward nature and life.
I receive your life as my own life.
It wasn't just a signal for a meal, but gratitude for the exchange of lives.
Yes, that's what it is.
When you know that deep meaning, it becomes more than just saying "itadakimasu" with your mouth.
Yes, that's right.
I can really understand the feeling of naturally wanting to put your hands together in front of your chest.
To you, our listener, the next time you eat Japanese food, please try putting your hands together while remembering these two gratitudes.
Yes, I'd really like you to try it.
Now that the greeting is done, it's finally time to start eating the food.
Oh, that's right.
Here, you notice something a little strange about actions during the meal.
It's how to hold the bowls.
Ah, this is one of the points that often confuses people who come to Japan from abroad.
That's right.
In many countries, you leave plates on the table and bring food to your mouth with a fork or spoon, right.
Yes, that's the norm.
But in Japan, it is considered good manners to lift the rice bowl or the warm miso soup bowl in your hand to eat.
Yes, that's correct.
Why is that.
One of the big reasons lies in the design of Japanese tableware.
In the design?
Yes, Japanese rice bowls and soup bowls are made on the premise of being held in the hand.
They are made from the start to be held.
That's right.
They are designed to be very light and to fit perfectly in the hand at the bottom.
I see.
By holding it in your hand and bringing it close to your face, you can eat without spilling and with beautiful posture.
So the utensils themselves are designed to be held.
Yes, that's right.
But the interesting part starts here.
Even in Asian countries that similarly eat rice and use chopsticks, the manners are completely, completely different.
Exactly as you say.
For example, if you cross one sea to Korea, the manners become completely opposite.
They become opposite?
はい。
Yes.
In Korean meals, the correct manner is to eat with the bowls left on the table.
That means lifting the rice bowl in your hand and bringing it close to your mouth like in Japan would conversely be a breach of manners.
With just a slight difference in country, correct behavior and bad behavior are completely reversed.
It's truly strange, isn't it.
Here's a question for you listening to this.
How is it in your country's culture.
When eating, do you hold the plate in your hand.
Or do you leave it on the table.
Learning about these kinds of cultural differences is the number one key to learning new things, isn't it.
Yes, exactly right.
Now, holding the rice bowl with one hand means you will use chopsticks with the other hand.
Yes, chopsticks.
These chopsticks are the most nerve-wracking point of Japanese manners, aren't they?
Indeed, there are many rules for the correct use of chopsticks, so many people feel pressured.
That's right.
But don't worry.
Today, let's set aside the detailed rules.
Set aside.
Yes, let's look in detail at just two major taboos, things you must absolutely never do and should avoid.
That helps.
If I just need to avoid the big taboos, that makes it feel much easier.
So, what is the number one taboo to be careful about?
The first one is an act called hashi-watashi.
Hashi-watashi.
はい。
Yes.
This is pinching food with your own chopsticks and passing it directly in mid-air to chopsticks held by another person.
I see.
This is an absolute taboo in Japanese dining that you must never do.
Um, why is that?
When you want to share a big piece of meat with a friend, for example, passing it directly from chopsticks to chopsticks looks very efficient and convenient, right?
That's right.
It may look convenient.
Why is it so strongly prohibited?
It may look efficient, but this is deeply connected to Japanese funeral rituals.
Funerals?
How are a fun meal and a funeral connected?
In Japan, after a person passes away and is cremated, there is an important ritual where the whole family picks up the remaining bones together.
At that time, a single bone is
picked up by two people at the same time with special long chopsticks and placed together into the urn.
That's what they do.
It's a motion like passing from chopsticks to chopsticks.
That's right.
If you pass food from chopsticks to chopsticks in a restaurant, well,
the Japanese people around you will instantly be reminded of this sad funeral ritual.
Oh my.
In a fun restaurant atmosphere, you would suddenly be reenacting a sad funeral scene.
Yes, that's what it means.
That is definitely something you must never do.
What should I do if I want to share food with a friend?
It's very simple.
Get a small plate, get a plate.
はい。
Yes.
Place the food on that plate, and then hand the whole plate to your friend.
I see.
So I just need to use a plate in between.
Then there is no problem at all.
I can put that into practice right away.
Never do hashi-watashi.
I've got it firmly memorized.
That's good to hear.
So what is the second taboo?
The second one is a behavior called tatebashi.
Tatebashi.
はい。
Yes.
This is sticking your own chopsticks straight vertically into the center of a bowl filled with rice and standing them up.
Sticking them in vertically, wait a moment please.
はい。
Yes.
Since the first taboo you mentioned was related to funerals, well.
Could this tatebashi also be related to funerals somehow?
Your guess is exactly right.
I thought so.
In Japanese Buddhist funerals and on altars for the deceased, when offering food, yes.
There is a custom of piling rice up like a mountain and standing chopsticks straight up in the center of it.
There is such a custom?
Yes.
This is called pillow rice.
So that means if you stick your chopsticks into rice during a normal meal, yes.
It becomes a message saying, this is a meal for the dead.
Exactly.
I see.
Even though you started the meal with gratitude for life by saying itadakimasu, yes.
Taking an action meant for the dead in the middle of it is considered very rude and ominous.
That certainly makes sense.
That is why these two are considered the most serious taboos among chopstick manners.
The more I hear the reasons, the more I truly understand that I must absolutely never do them.
I'm glad you understand.
But there are many other chopstick rules, aren't there?
That's right.
There are many detailed ones.
For example, mayoi-bashi, hovering with chopsticks in hand over the table while wondering which dish to eat.
Yes, that exists.
Or yose-bashi, hooking a faraway plate with chopsticks and pulling it toward yourself.
Yes.
Honestly, there are too many rules, and I don't feel confident I can do them all perfectly.
It's natural to feel that way.
But don't worry.
Are you sure?
はい。
Yes.
Actually, even Japanese people living in Japan cannot perfectly follow all the detailed chopstick rules.
Is that so?
That's a bit reassuring.
The small rules are just to make your eating look more beautiful, so it's okay if you're not perfect.
So they're to make it look beautiful.
Yes.
But the two we talked about today, hashi-watashi and tatebashi, are different.
These two are special.
はい。
Yes.
These can make the people around you feel sad or uncomfortable, so it's important not to make others uncomfortable.
That's right.
If you just keep these two things in mind, that's enough to start with.
Hearing that really put me at ease.
They're just the minimum rules to avoid making the people around you uncomfortable.
Yes, that's right.
Then I can relax and enjoy the meal.
Yes, please enjoy.
Now, I've eaten lots of delicious food and I'm full.
The meal is at its end.
Yes, this is the scene where you pay the bill and leave the restaurant.
Yes.
As I mentioned at the beginning, izakayas are often very noisy with music playing and other customers talking, right?
Because they're so lively.
It's a bit embarrassing to shout out to a staff member far away, "Check, please," and sometimes your voice doesn't reach them.
There's a very useful gesture unique to Japanese restaurants that comes in handy at times like that.
A useful gesture?
はい。
Yes.
When you make eye contact with a staff member, you don't have to raise your voice.
What do you do?
At about face height, you cross the index fingers of both hands to make an X shape.
You make an X with both hands?
That's right.
From an overseas perspective, an X sign feels like it has a negative meaning like "No good" or "Cancel," but it's a sign for the check.
It may feel a little strange,
but in Japanese restaurants this X gesture is fully established as a clear sign meaning "Check, please."
It's completely established.
はい。
Yes.
Even without saying a word, the staff will understand right away and prepare the register.
That's amazing.
It's a really convenient way to communicate in a noisy restaurant, so it's a technique I'd love travelers to try.
It's a wonderful gesture that can overcome the language barrier.
Next time I go to a noisy izakaya, I'll definitely try it.
Please do try it.
And after paying the bill, before opening the restaurant door, yes.
There's one last important communication, right?
That's right.
Just as the meal began with the words of gratitude, "Itadakimasu."
Yes, you also close at the end with words of gratitude.
What words are they?
When you leave the restaurant, try cheerfully saying to the staff, "Gochisousama deshita."
That's the perfect way to wrap up.
Just that one phrase, "Gochisousama deshita," makes the staff feel happy that the customers enjoyed it, and yes.
And you yourself can leave the restaurant with a very warm and fulfilled feeling.
That's right.
Looking back on what we've explored today, yes.
Waiting for the staff at the entrance.
"Itadakimasu" with gratitude for life.
Yes, how to use chopsticks so as not to offend those around you, and finally "Gochisousama deshita."
There were a lot.
None of these are just strict rules, yes, it's clear they all come from one big root: consideration for the space around you and
compassion for others and for the ingredients.
That's really true.
はい。
Yes.
Yes. At first I started with the image that Japanese manners are strict, but once I learned the reasons behind them, I realized it's actually a kind and considerate culture full of thoughtfulness.
I'm glad you feel that way.
What we talked about today, especially the X gesture and such, once you know them you want to use them right away.
Yes, because they're very useful.
You listening to this, the next time you go to a Japanese restaurant, please confidently try using the knowledge you gained in today's short lesson.
And finally, there's one thing I'd like you to think about.
What is it?
Today, in our talk about whether to hold the bowl in your hand or leave it on the table, we gave the example that manners are completely opposite in Japan and Korea, right?
Yes, we talked about how they are reversed.
Culture is a mysterious thing where what is correct can completely change once you cross a border.
Yes, so here's a question for you.
Among the dining rules and customs in your country, if a Japanese person saw them,
what is the most unique rule that would surprise them the most, making them wonder why you do such a thing?
A surprising rule?
はい。
Yes.
And why was that rule born in your country?
Wow, that's a really interesting question.
Right?
Looking at the common sense of your own country from the perspective of another culture.
Doing that should lead to new discoveries.
Yes, I really hope you'll think about it.
Please also take some time to think deeply about the rules of your own country and the reasons behind them.
はい。
Yes.
Well, that's it for today's short lesson.
Thank you so much for learning with us until the very end today.
