Hello, this is Chef John from FoodWishes.com, with Crime Scene Chicken.
こんにちは、FoodWishes.com のシェフ・ジョンです。
That's right, this chicken has been a victim of foul play.
It's been stabbed, drowned, burned, and shot with a camera.
But the technique I'm about to show you is much more than a provocative presentation.
It's a way to do roasted chicken that has a lot more flavor.
Oh yeah, this is to die for.
And to get started, we're going to need one whole chicken.
And strangely enough, this one came with a wingtip missing, almost as if whoever butchered it saved it as a souvenir.
But anyway, to prep this, what we'll do is take a sharp knife and we'll start making deep cuts and slashes all over the carcass, starting with the leg all the way down to the joint.
And then for pretty much every cut we make, we will also slice across, again nice and deep.
And once the leg's done, we'll do the same thing to the thigh, and then we'll repeat that on the other side.
And besides giving us that intentionally horrific look, we're going for these deep cuts are going to allow our wet rub to penetrate into the meat.
And after it's roasted, the meat's going to be way more flavorful than if we just put everything on the outside.
And then for the breast, I'm going to make one long deep slash near the center, and then slice across here and there wherever I think it looks good, or I guess I mean bad.
Oh, and pro tip: I think we should do these sort of randomly and semi-asymmetrical.
All right, if we did this very precisely, it would look more ritualistic, which would indicate premeditation.
But if we do these randomly, it will seem more like a crime of passion.
And a good lawyer will get us less of a sentence for that.
But anyway, you're going to be the one holding the weapon, so it's going to be up to you.
I mean, you are, after all, the Edgar Allan Poe of where these cuts should go.
But anyway, once those main muscles have been slashed, cut, and stabbed, we can do a little bit of knife work on the skin in the back.
Especially into any of the fattier sections, which will help that render out as it roasts.
And then we can do the same thing to the skin in the front, if there's enough.
But this one didn't really have too much there, so I'm going to stop and set this aside for a minute while we go ahead and make our wet rub, also known as the blood.
And we'll start that with some Korean chili paste, known as gochujang, or as any real food whisperer pronounces it, gochujang.
And then to that we will also add some ketchup, followed by a little bit of honey for sweetness to balance these other flavors.
Although we could also use brown sugar or maple syrup, or even some molasses, which maybe would have gave this more of a bloody color.
But anyway, we'll follow that with some soy sauce, as well as a little touch of sesame oil.
And then we'll also toss in a little bit of garlic powder, as well as some onion powder, which is always clumpy.
Why is onion powder always clumpy?
And that's it.
We'll go ahead and give this a whisk.
And as usual, as we're doing this, we're always trying to remember what we forgot, which for me was the rice vinegar.
So I added that in and finished the mixing.
And then before we drown our chicken in this, we'll take a ladle and we'll remove about half into a saucepan that we'll use to decorate our crime scene and serve with the cut chicken later.
And once that's been accomplished, we'll grab our chicken and we'll place it into the bowl and we will generously salt the surface as well as the inside of the cavity,
since we didn't add any salt to this wet rub.
And once we've added that additional seasoning, we'll go ahead and toss it around, drowning it in the mixture until it's coated.
And you're probably thinking that's too shallow to use the term drown, but it's not.
And I'd love to explain why, but I can't.
And once our chicken has been tossed around, I'm going to grab a pastry brush and use that to finish the job and make sure that stuff is going into every nook and cranny.
And once we feel like that's happened, we'll go ahead and transfer that onto a lightly oiled aluminum foil-lined baking sheet.
And once that's been placed on, if we have any extra sauce, we can brush that on as well.
And that's it.
This is now ready to transfer into the upper center of a 450-degree oven for about an hour, depending on how big your chicken is,
or until it's safely cooked through, as determined by you.
And while that's happening, we'll take our reserve sauce and we'll pour in a splash of cold fresh water, and we'll give it a stir and bring it up to a boil.
All right, not a vigorous one, since we don't want this to reduce.
So all we need is something that looks like this.
And what we'll do once we have that is whisk in a cornstarch slurry, which is a teaspoon of cornstarch dissolved in a tablespoon of water,
and we will whisk that in and reduce our heat to low.
And that cornstarch should thicken this up just enough to make it sort of look like blood.
And that's it.
We can turn off the heat since that's pretty much ready to use.
And sure, we could adjust this with some food coloring for an even more realistic blood color.
But for me, that was close enough.
So what we'll do is set that aside and wait for our chicken to finish cooking.
At which point, if everything goes according to plan, it should look absolutely horrific.
But don't worry; it's going to look worse.
And what we'll do at this point is grab a clean pastry brush, and we will brush some of those pan drippings here and there.
And yes, I said clean brush.
I do not use the one you used on the raw chicken unless you want this to turn into an actual crime scene.
And once we've brushed the body, we'll remove that to a plate.
And when you do, try not to poke through the foil with your fork like I did, since now I have to wash what would have been a nice clean pan.
But anyway, we'll take that and transfer it onto our serving platter, and then we'll take these delicious accumulated juices and we will add them to our blood sauce.
And then we'll head over to complete our crime scene scene, and maybe we'll break and dislocate a wing, and or tear some of the skin to make things a little more gruesome.
At which point we'll grab our saws and bloody this thing up.
And in hindsight, I probably applied too much, since I kind of filled in some of the cuts and things started to look less violent.
But I definitely wanted it to pool up on the tray in certain spots.
But no matter how much you use or where you put it, I think we definitely have to finish by blood splattering the tray.
Oh yeah, that's how those CSI people are going to figure out if we're left or right handed.
And that's it.
I finished up by impaling one of the legs with my meat fork, and then of course, as a final touch, we have to place the murder weapon near the body.
And that's it.
What I'm calling crime scene chicken was ready to enjoy.
So let me go ahead and slice off a few pieces and see how I did.
And that, my friends, appearances aside, is just an absolutely fantastic way to roast chicken.
All right, by making all those deep cuts, we've created a ton of extra surface area, which always means more flavor and deeper flavor.
And if you're worried the technique's going to dry the chicken out, don't.
This was perfectly moist and juicy, so fear not.
And while I thought the Korean barbecue-inspired take we did here really was amazing, don't forget this is just a technique, not a specific recipe.
So feel free to try this with other flavorings and sauces.
And no, we probably shouldn't just eat off the platter.
What we'll do is carve up the chicken and serve it over something nice, like some roasted Brussels sprouts and brown rice.
And we'll top that with some more sauce and maybe some snipped chives.
But no matter how you serve this, I think it's a really fun idea that your guests will enjoy.
And whether you do this for something like a Halloween party, or for a new murder mystery series watch party,
or just to confuse your family on some random weeknight, no matter the occasion, I really do hope you give this a try soon.
