Rinsing white rice is one of those things that I was taught to do by my grandmother, and for years I never really thought about how or why.

I just put the rice in the pot, I added water, I swirled, drained it, and I repeated until it looked right.

Here's what's happening: this rice is coated in a dusting of starch that was created during processing, bagging, and transport.

If we cook that starch, it absorbs water and it becomes a glue of sorts, holding the grains together.

So, if you want your rice grains to separate from each other easily, you have to get rid of that starch.

Here are your two options: place the rice in a bowl or the pot you're going to cook it in, and add cold water.

I look for the rice to be covered by maybe a half an inch of water.

Swish it around gently.

The goal is to loosen free starch, not to rub the grains together to create more free starch.

So your water is going to get cloudy as you swirl the rice in it.

And here's the thing: both the rice and the starch are denser than water, and so if you let them sit, they'll both settle to the bottom.

The rice, though, it settles a lot faster.

So to minimize the number of rinses, drain the starchy water as soon as that last grain of rice settles.
