Today I'm gonna show you my well-tested recipe for shrimp and grits, which, if you haven't had it, is tender plump shrimp served in a bacon sauce over cheesy, creamy cornmeal.

A lot of grits are gritty and bland, but that usually comes down to how they're cooked.

In this video, I'm gonna show you all the techniques that I use to make grits properly creamy, super tender, and deeply flavorful.

To make this, I've got a three-quart sauceier going down over medium heat.

Then I'm gonna add in 600 grams of whole milk and 600 grams of chicken stock.

Then I'll whisk in 10 grams of salt, and then I'm gonna bring the whole thing up to a simmer over the course of about three or four minutes over medium heat.

But during that time, don't walk away, just because milk can scorch and get stuck onto the bottom of the pot and burn pretty easily, and also milk is dying to boil over and make a huge mess.

So you just want to keep a really close eye on it.

Okay, after about three to four minutes, you can see as soon as the milk starts boiling, saved it, bro.

As soon as it hits a boil, that stuff expands so rapidly, so you really gotta be careful.

Anyways, I killed the heat, and now I'm gonna drop this to about medium low, and then I'm gonna grab 200 grams of old-fashioned white grits and add those in while stirring the milk.

And then I'm just gonna keep the grits moving as this comes back up to a simmer.

The boil-over risk is not gone at this point.

We gotta wait for the grits to hydrate for that to happen.

So we're just gonna keep this moving for another 60 to 90 seconds.

And after about two minutes or so, you can see that these are starting to thicken up a little bit, and they're not quite plopping, but the bubbles are getting larger, and it's looking more like porridge.

Now, some people in the north might not have any experience with grits, so quickly I just wanna explain what they are.

Basically, a grit is a milled field corn.

Sweet corn is what we have during the summer in the Midwest, where you know you eat it fresh.

But field corn is the stuff that you see growing in most of the farms in the Midwest, and that's the stuff that's turned into animal feed or popcorn, depending on the variety.

Essentially, it's just a very dry, husky piece of corn that takes a really long time to get tender.

And the grit version is particularly coarse and particularly rustic.

Now, with old-fashioned style grits, which are the ones that we're using here, it takes 90 minutes of cooking to get tender.

I know that seems like insanely long amount of time, but they're really freaking coarse.

And in fact, I think most people who haven't had good grits in their life and would say that I don't like grits.

It's probably because the grits weren't cooked long enough.

It just takes a long time for that stuff to get soft.

So if you really wanna test your product, you have to be a little bit patient.

Okay, after about five minutes or so, this is thickened up, and the grain has started to hydrate.

I'm gonna pop on a lid to help mitigate excessive evaporation.

Now, from here, I'm just gonna move this over to the back burner on my stove over low heat, and I'm gonna cook it for 90 minutes, stirring it every.

Now I know a lot of people out there thinking to themselves, "Hey, bro, I really don't want to do that.

You can definitely cook these grits in a pressure cooker, but there's a couple caveats here.

Number one, you can't use milk because it will definitely burn onto the bottom of the pressure cooker, so it's going to make your final grits a little bit less creamy.

And number two, everyone's pressure cooker is a little bit different, and so the recommendation that I give you here may or may not work for your exact vessel.

So the recommendation is pressure cook for 15 minutes with the same amount of liquid, but use all chicken stock, and then let the pressure release naturally for 20 minutes.

And this will give you grits that are cooked all the way through.

Again, I can't guarantee that it's going to work every time, but it'll probably work, and it can save you a lot of time and attention.

But for me, I like working grits into my lifestyle.

What does that mean?

So let's just say I'm going to be having a theoretical dinner party at like 6 p.m. tonight, and right now it's Saturday at 12 o'clock.

So I'm doing a couple tours around the house.

Next, we got to figure out the shrimp part of the shrimp and grits.

For that, I've got 450 grams of thawed 21-25 red Argentinean shrimp.

I love this shrimp for this dish just because they're sweet and plump.

They've got a nice lobstery flavor, and they're pretty difficult to overcook compared to a Asian farmed white shrimp.

That being said, if you can't find these shrimp, you could sub in white shrimp.

To prep these up, I'm just going to cut them down the center line here, like this, into two even size pieces.

Now I'm cutting these in half like this just because at this 21-25 size, which is the size that I can get these really nice shrimp, it's a more manageable amount of meat.

When they're kept whole, they're point seven five ounces each, and I just I don't think most people realize this, but that's too much meat at once.

Also, at this size, they cook a little faster and more evenly, and they they take on this cute little corkscrew form factor that still looks like a shrimp, which I think is important for this dish.

And once I've got my 450 grams of shrimp cut in half, I'm going to jump back over to the stove before I do anything else and give my grits a quick stir.

And I'm using this silicone whisk to scrape up the bottom again, just to make sure there's no grains getting stuck and nothing is getting scorched.

Now into my shrimp, I'm gonna add five grams of salt and two grams of ground black pepper.

Then I'll just fluff that to get it all evenly seasoned.

Adding some salt to shrimp ahead of time is always a good move, just because it helps keep it nice and plump, helps it hold onto its moisture.

Especially for a wild shrimp that isn't gonna be particularly plump full of fats, like farm shrimp are, it just gives it a touch more plumpness that I think we associate with shrimpness.

So overall, just makes the shrimp a little bit better.

Once these are all tossed up with salt, I'm gonna move them over to the fridge to hang out and stay chilly until we need them for the sauce.

The next thing I wanna do real quick is to chop down some bacon for the base of this shrimp and grits.

And to do that, I'm just gonna get rid of any excessive fat on either end, just because that'll be flabby.

Also, if you don't eat pork, you can definitely make good shrimp and grits without this.

In total, we need about one fifty to one seventy five grams of this chopped bacon.

Once I got my bacon cut, I'm gonna get a Dutch oven-like cooking vessel hot over medium heat.

At this point, I'm in what I call late-stage grit.

These have been cooking for about an hour, so and they're mostly tender at this point, but they need just a little bit more—maybe about 20 or 30 minutes.

And the shrimp sauce is only gonna take about 20, so this is gonna work out perfect.

Now, once my pot is warmed up, I'm gonna add in a little bit of fat, little bit of water, maybe three tablespoons.

Then I'll just jump in and stir to break up the bits of bacon.

And then I'm gonna cook this over medium heat for about 10 to 12 minutes until the bacon is not crispy but nicely rendered and getting that reddish golden brown color.

Now, I started with the water here just because it delays the browning of the bacon and speeds up the rendering of its fat, so we can get to that point where it's frying in its own fat a lot more quickly, and it just makes the bacon cook more evenly overall.

Okay, while these cook, I just want to mention that in between cutting this bacon and starting the cooking process, I actually prep the mirapua or the aromatic vegetables.

Once those go into the pot, I'll talk a bit more about how they're prep.

But I want you to know before you start cooking, you need to have this stuff cut up and ready to go.

And after about four minutes, you can see the water has evaporated and the bacon is now sizzling in its own fat.

And actually, we've got a little bit of bacon fond developing on the bottom of the pot, and that's actually great.

And that's what we're looking for here.

This stuff is gonna bring a lot of flavor to the sauce.

But you gotta keep an eye on it.

It's gonna stay pretty hot, and that stuff that's stuck on the bottom of the pot can get dark pretty quickly.

So keep some water handy.

But if it goes from something that's golden brown to dark, golden brown, like coffee-colored, you can deglaze to get that off the bottom.

Now, I'm not wanting to cook this to the point where the bacon is actually crispy, just because you gotta keep in mind it's going into a wet sauce at the end, and any crispiness is going to be negated by that moisture.

And if you get it too crispy, the bacon's gonna eat kind of dry.

So I like to get it somewhere in that sweet spot where it's fully cooked.

The fat is all the way rendered, and it tastes great, but it's definitely not crispy like breakfast bacon.

The main thing is really just rendering out the flabbiness of the bacon, just because that's not pleasant at all, and it makes the dish feel really fatty.

Okay, and after let's call it seven to eight minutes over medium heat, you can see the bacon is crossed over into reddish golden brown territory.

There's no large chunks of flabby white fat, and it looks really delicious.

So I'm just gonna scoop this bacon out into a little bowl now, so it doesn't get overcooked.

Then, as you can see, that bacon fond in the bottom of the pot is starting to get a little bit dark, and we want to avoid that.

So we need to go in with the mirapua really quickly to start deglazing.

Next, a nice strong pinch of salt to draw some moisture out of the aromatics.

Then I'll jump in and stir and start scraping.

it right away to try and get that bacon fond brought up off the bottom of the pan.

And as you can see, after maybe 20 seconds of stirring, there's a lot of moisture that's coming out of the bell peppers and the celery and the onions, and there's no longer that fondy stuff stuck to the pan.

Now, from here, I'm going to sauté this mirpaw with pretty intense heat for about seven to 10 minutes.

Kind of depends on how long it takes to get color, basically.

But the important thing is that we're using pretty aggressive heat so that we can actually get some caramelization on the veggies.

Normally, when I'm cooking mirpaw like this, I'm using a very low or moderate heat to sweat the vegetables, and that basically just means that I'm cooking out moisture while concentrating the flavor, while not developing any color.

For me, this dish just needs to have a certain intensity of flavor and intensity that, as people, we didn't get it from cooking the mirpaw gently.

So you want to hit it kind of hard.

Also, you'll notice that I cut these veggies quite small.

I would call this somewhere in the ballpark of like small dice, somewhere around a quarter inch.

And I did that just because I want the aromatics to melt into the background of the sauce, and I don't want them to stand out texturally.

For me, this dish is just about plump shrimp and cherry grits, and one thing that I really don't want is a giant chunk of celery or bell pepper to distract me from that.

And you might have noticed that I'm using the Cajun Trinity here as far as mirpaw goes, and that's just because in my mind, shrimp grits is kind of like a low country, South Carolina version of shrimp etouffee, so it makes sense that we have a very similar flavor base.

And after about eight minutes of cooking this over pretty high heat, you can see that the onions are starting to get a little bit brown.

The vegetables have lost about half of their volume, and things have taken on a nice golden brown color overall.

So next, I'm going to add in 20 grams of minced garlic, then I'll stir that in, then continue sautéing for about 90 seconds, but I want to keep a close eye on it because again, this is pretty high heat, and the garlic can get burned pretty quickly.

As some of you guys know, at this point, I'm not the biggest fan of tomato paste straight out of the can, and so I always like to cook it in a little bit of fat if I can to change its flavor and make it a little bit more mature and get rid of some of that tinny metallic flavor.

And if they're getting really tight at this point, meaning like they've absorbed a lot of water, don't be shy about adding another half cup or so to moisten things up, because if they're stiff, they're not really going to be cooking.

Okay, as you can see, the tomato paste is nicely fried here.

We're getting to the point where we're getting a little bit more fond on the bottom of the pot, so for me, that's a signal that we want to move on.

Next thing in is going to be 20 grams of all-purpose flour, then 5 grams of paprika and 2 grams of cayenne.

Then I'll just jump in real quick and stir to get that combined until there's no more lumped flour, and then I'll take about 25 seconds or so.

Once the spices are in here, you want to be careful.

Maybe even turn the heat down to medium instead of medium high, just because with that kind of heat, they can get burned.

Next thing in is going to be 550 grams of chicken stock.

Then I'll just whisk to get everything combined and bring it back up to a simmer and cook this for let's call it three to five minutes.

What you want to do in that time period is thicken the sauce a little bit, reduce it by about 15 to 20 percent, and you want to soften the vegetables just a little bit more.

One of my all-time biggest pet peeves is when there is celery in something, but the celery fiber has not been softened, and then when I go to take a bite, it gets crushed in my teeth.

Nothing will ruin a plump shrimp experience more than having celery fiber in the mix.

So this extra three to five minutes is just going to make sure that everything is nice and soft and melted into the background.

Oh yeah, I'm also going to add in my bacon at this point and give it a second to get simmered.

At this point, you can see we got a little bit of hot oil on top.

Next, I'm going to bring in the shrimp.

In total, these shrimp sat in the fridge about 60 minutes or so, which I think is the right amount of time.

I wouldn't go much longer than that because they can start to get salty.

Anyways, shrimp are going to go in.

Then I'm going to come back and spread them out into an even layer and make sure that they're getting evenly covered with sauce.

Then I'm going to pop on the lid and cook these covered with low heat for about three minutes or so.

Like I said earlier, these red Argentinean shrimp are pretty robust and pretty hard to overcook, and I wouldn't cook them less than two and a half minutes.

So from here, I'm just going to move this pot.

Got these rolling over low heat, and now I'm going to check on my grits.

Which after 90 minutes, you can see that they've tightened up a bit.

Every single grain of corn is swollen up.

This is a very, very important detail that I think a lot of people miss.

First of all, in the front of your mouth, it's very satisfying.

It's very creamy and it kind of just spreads over your tongue.

This stuff is very tender and honestly very luxurious.

I'm going to set this aside for a second, off heat, to let the grains continue to swell while I finish up the shrimp.

These have been cooking for about two and a half minutes at this point, and they're most of the way there.

But I'm going to give them a quick stir just to make sure everything's getting cooked evenly, and any hot spots are getting evenly distributed.

And the way that I know that the shrimp is cooked is just that they transition into this nice opaque color instead of having that grayish translucence.

The last step here is to just taste the sauce for salt level to make sure it's properly seasoned.

That tastes like a combination of lobster bisque, crawfish boil, and étouffée, all kind of mixed together.

From here, I'm just gonna pop on the lid to keep things warm.

Set it back aside, and then I'm going to grab my grits so that we can cheese them up.

First things first, I'm gonna add in a little bit of stock.

This is optional, but the grits have swollen up quite a bit, and they're a little bit tight.

Then I'm gonna add in 40 grams of butter, 100 grams of shredded sharp white cheddar cheese, and 30 grams of parmesan.

Then, over low heat, I'll jump in and stir to get everything combined.

As the cheese and butter melt in, you can see that this gets thickened up into almost like a potato puree or mashed potato texture.

And for me, this is perfect.

It's a middle texture between really thick, which would be gloppy and kind of stick to the roof of your mouth, and loose and thin, and that wouldn't be good because we're putting a bunch of sauce on top of it.

That would dilute things and basically make shrimp and cornmeal soup, which would would obviously be disgusting.

Another last step here is to just taste this for salt level.

Now to plate this up, I'm gonna put three generous spoonfuls of grits in the bottom of a low bowl here.

So I think it's important to have something that stands up on its own.

Okay, the final touch here is to put a nice pinch of minced chives right in the middle to bring a little bit of fresh onion flavor and some greenness to make things look pretty.

Then I'm gonna take a lemon and give it a light squeeze right on top.

I don't put the lemon right in the sauce here, just because it gets a little bit of a cooked flavor.

It loses its edge, and it gets kind of a lemonade taste to it.

When you put it right on top, you get full punch, full flavor, and it's really needed to stay to cut through the richness of those grits.

All right, first bite's gonna be a little bit of everything.

You taste every single grain, and then the nuttiness from the parmesan and the saltiness from the cheddar.

Also, flavor wise, there's so many different dishes that I feel like this is inspired by.
