Regarding today's rice crackers, they are Okinawa-style. Moving on to the next question. A small fish with a slightly open head reminiscent of a small salmon and a blackish body, growing to about 1.5 meters.

This small fish is the amberjack. In the Sea of Japan, it is produced in large quantities in southern Japan.

With natural fish decreasing, we were looking for a way to obtain a stable supply of fish, and we found that aquaculture in Okinawa can supply fish very stably.

It's difficult to survive now, but amberjack can survive up to about 30 degrees. Recently, summers reach about 30 degrees, so it's a suitable fish. As seawater temperatures rise in recent years, amberjack is said to be heat-resistant and highly tolerant of life. Furthermore, the amberjack is evaluated for its fast growth. Here, they aim to ship it in half a year from the start of growth. I think it will attract attention as a fish that can be raised in high water temperatures and as a delicious summer fish.
