Hey, I'm John Canell, and today on Preppy Kitchen we're making a zingy, amazing lemon meringue pie.
So let's get started.
First off, the crust.
You have a choice here: store-bought or homemade.
If you're using a store-bought pie crust, bake according to the instructions.
If you want to make a beautiful,
buttery homemade pie crust, click up here for my pie crust video where I show you all my tips and tricks on how to make it and turn it into this.
Basically, after chilling your dough, you're gonna roll to a 12-inch circle, transfer it to your pie tin, fold the edge under, crimp it, and chill it.
I made this a few days ago.
It's been hanging out in the freezer, and now it's ready to use.
Preheat your oven to 425.
Dock your pie crust.
Place a round of parchment paper right inside, along with some foil.
I just folded the edge here so it has more strength.
Your pie crust is so delicate when it starts baking, it can melt and turn into a puddle.
That's why we're chilling it and supporting it with the foil.
And now we need some weights to hold it down.
Otherwise, the steam will turn this into a giant bubble that's unusable.
You can use dried beans or pie weights.
My homemade pie crust is ready to go into the oven for 25 Fahrenheit for 20 minutes.
Then we'll remove the paper, the foil, and the beans carefully, and put it back into the oven to bake for additional 15 to 20 minutes
or until it's nice and dry and golden.
Just make sure it's placed on a rimmed baking sheet.
In you go.
If you're baking a homemade crust, it's super important to tent it after you put it back in the oven.
Once the pie weights are removed, you can use a pie shield like this, or just fold some foil over and loosely cover the edge.
This will prevent your pie from burning.
Now we can make what's essentially a luscious and zingy lemon custard for the filling.
To do this, you'll need five egg yolks.
So separate your eggs.
Normally, I would say don't worry about having some yolk in the whites, but I'm going to use four of the five whites for the meringue at the end of this recipe.
So be careful.
And if you're really paranoid about having a broken yolk, you can use a separate bowl and go one by one.
I'm going to live on the edge.
Two.
What's really lovely about this recipe?
One, if you're using my crust recipe, I love that crisp butter crust with this gooey filling and that light as air meringue topping.
But even if you love lemon meringue in general, when you get it from a bakery, it's been hanging out for a while.
Having a fresh one with no preservatives is truly amazing.
Fifth yolk.
So that means that this extra white goes into a separate bowl.
Could be for your breakfast tomorrow.
Now I have five egg yolks for now, four egg whites for later.
Now I can transfer my yolks to a larger bowl, or I could have used a larger bowl in the first place.
Grab a whisk and mix this up.
That beautiful color that you love in a lemon curd comes from the yolks, not the lemon juice.
Okay, set this aside.
Now grab a medium pot and a scale, if you'd like, into which I'm adding my cornstarch and sugar.
I want six tablespoons of cornstarch.
The cornstarch will help our custard set.
Too little, and it might be runny.
Too much, and it'll be rubbery.
So really, be precise here.
Now I want one and a quarter cups of granulated sugar.
That's 250 grams.
And finally, a quarter teaspoon of salt.
One more whisk, and just give this a good mix.
That was the wrong whisk.
There we go.
We're whisking this up now because there's less chance of having lumps in our cornstarch if it's nicely combined with the sugar.
Okay, now that this is mixed up, we can deal with the lemons, the star attraction of our lemon meringue pie.
For maximum flavor, we're going to use both the zest and the juice.
I'm going to want two tablespoons of lemon zest.
That's about two lemons.
You could use a little bit more if you wanted.
I often do.
If you're worried about the texture of the lemon zest in your lovely, luscious curd, don't worry about that.
We'll be sifting it out later.
Okay.
And if you don't have a microplane in your kitchen, it's one of my favorite tools.
You could use it for zesting citrus or for having clouds of cheese.
So it's handy for savory and sweet things.
Also for grating nutmeg.
Lots of lemon zest.
This smells so good.
Tons of flavor in the oils here.
Now the zest can go into the sugar.

Two new recipes every single week, and we can juice the lemons.
For the juice, you want three quarters of a cup or 180 mils, no seeds, please.
This recipe comes from 19th century Philadelphia.
A pastry chef named Elizabeth Goodfellow came up with it, and we thank her for that.
I think this pie became really popular in the '50s too.
It's like a classic diner pie.
You get apple or lemon meringue, chocolate if you're lucky.
In part because it holds really well, so you can make this recipe in advance.
Your homemade lemon meringue pie will be good in the fridge for up to two days.
I would say three to four if there's no meringue topping.
The meringue is what kind of starts losing its integrity.
Okay.
Perfect three quarters of a cup.
Now we can add the liquid in.
I'm going to slowly drizzle in one and a quarter cups of water while I whisk.
This is again to prevent lumps.
That's 300 mils.
Whenever I'm making something where I have to be stirring over heat in a pot, I love using a narrow whisk.
The balloon whisks just cannot get into the corners well, and they're frustrating.
All right, this has all of our water, but what about the lemon juice?
We're going to add that in now too.
And do not ever be tempted to use bottled lemon juice for this recipe.
Don't do that.
My cornstarch has dissolved, so we're going to pop this over medium heat, whisking almost constantly until it's thickened up.
I'll show you what that looks like.
It'll be about five minutes.
You don't have to be super intense about the stirring here.
It's really once you have eggs in this mixture where things can go left.
So right now, it's just water and sugar and cornstarch, lemon juice.
Not a big deal.
I realize this recipe is a bit more involved than like making a cupcake or a sheet cake.
But if you're really motivated to make it but short on time, I suggest stepping things out.
So one day you can make the pie crust, or just buy it from the store.
The other day you can grab it from the fridge or the freezer, roll it out and shape it.
Can live in the freezer for a while.
Then you can get this part here, and honestly, the cornstarch, the lemon zest, the water and sugar, that could hang out in the fridge for a few hours.
Then you can make it and fill it.
Like you can do this in steps really easily.
After a few minutes of stirring, it'll go from being very watery to more of a gel, and it'll happen gradually.
And then it'll be like that.
Take a look.
See, it's also changed color.
If you're curious, just use a wooden spoon.
Give it a dip, and the line of your finger should hold.
You see, you can tell how thick it is already.
But it's time to temper the mixture.
If I dump this all into the egg yolks, they might curdle, and that would be unacceptable.
So you can measure out, or in my case, I'm going to eyeball one cup of this hot mixture, and slowly drizzle it in while I whisk vigorously.
Now it's time to go back to the pot and take this egg mixture and drizzle it in while we whisk.
Slowly pour this back in while whisking.
Once it's all whisked in, we can go back onto medium heat,
whisking constantly until this is thickened, and we'll be looking for a trail to be left as we stir.
I'll show you what the texture looks like.
It's the most important part of this recipe.
Whenever you're making a lemon curd, you cannot trust a thermometer.
It has to be about the texture.
As I'm whisking, I like to start in the center and make a larger and larger circle until I come to the edge, and then go back to the center.
This just helps me ensure that there's no chunks at the bottom that are going to be getting overcooked.
All right, I can see it's just starting to bubble now.
I'm really close.
I just want to see if there's a trail left by my whisk, just like this.
Take this off heat as soon as you reach that bubbling with a trail stage.
This looks delicious, but it's missing something, and that's a little hint of glossy fat so that it dissolves on your tongue
and makes you feel amazing when you have every bite.
That can be accomplished with butter.
I'm going to use four tablespoons of cubed butter.
That's basically cold, and this will help cool things down, but it'll also make the mixture so much richer.
It's incredible.
Stir in the butter until it's all melted.
If you want to have a completely smooth curd, you can sieve it out right now.
I'm a texture fiend, but this doesn't bother me because the zest has been cooked down.
It's really soft now.
It also has a lot of lemon flavor left in it, so it's a bit of a trade-off.
You might also want to sieve things out if you're worried about there being some scorched areas in the pot or overcooked little bits.
I'm pretty confident that there's none of that going on, but it's never a bad thing to sieve it out.
My pie crust has come out of the oven and cooled.
I'm going to remove my shield, and now we can pour our warm filling in.
Pour your lemon curd into your crust.
Use a spatula to get it all out.
No waste.
Give a little bit of a smooth, and you can refrigerate this now for four to up to twenty-four hours.
If you're refrigerating it for a long time, I suggest covering with parchment paper so it doesn't develop much of a skin.
My pie is chilled, so preheat your oven to three hundred and fifty, and now we can start making our meringue.
Into the bowl of your stand mixer fitted with a whisk attachment, we're going to add our egg whites, four of them, along with a quarter teaspoon of cream of tartar.
This is an acid derived from the winemaking process, and it's going to stabilize our meringue.
And I would suggest you use superfine sugar for this, not regular granulated.
We're going to start on low, work our way up to medium-high, and beat until our eggs are nice and frothy.
While that mixes up, measure out half a cup of sugar, one hundred grams.
For the nicest meringues, you're going to add your sugar in quite slowly, so just a little drizzle.
Very slow.
You can add it in a spoonful at a time if that's easier for you.
If you just dump the sugar in, the meringue is not going to have that beautiful fluffy consistency.
You want the sugar to dissolve in the egg whites, and that only happens when you add it in slowly while mixing.
If for some reason you're watching this video and you love lemon and you love pastry, but you don't love meringue, you can top it with whipped cream or enjoy it plain or with berries on top.
You do not have to make the meringue topping.
You could have a lovely lemon pie instead.
I've only added in like two thirds of the sugar, and this is so silky and thick.
What you're going to get by adding the sugar in is that marshmallowy, really thick meringue,
which is great because it has to hold up and not melt once it's on the lemon curd.
And the last bit.
I'm going to stop right here just to show you that already we have a really thick, beautiful, glossy meringue.
It's quite powerful as well.
Look at this.
See how nice that is?
We're going to mix it for five more minutes.
It'll help some more of the sugar dissolve, and it'll be even more lovely.
Five minutes, medium high.
We'll be right back.
After five minutes, I have a very thick and lovely meringue.
You'll even hear the sound of the mixer change as it struggles or works harder to beat this now very thick marshmallowy meringue.
You can see it's so silky.
You don't want your meringue to weep, so make sure all the sugar's been dissolved.
Grab some with your clean hands and rub it between your fingers.
It should feel nice and smooth.
If it's still gritty, keep mixing.
Carefully transfer your meringue onto your curd.
The curd is soft, remember, so you're gonna have little islands basically that you plop on top and gently smooth.
Once all the meringue is transferred over, your job is to make sure it completely seals the top.
So touch the crust.
There is no curd exposed.
Now gently pull the meringue towards the crust.
Once your meringue is anchored to the crust, it's much easier to go in with your spatula and start filling in any gaps and doing some swoops.
Nicely swooped up.
My lemon meringue pie is ready to go into the oven, 350 degrees Fahrenheit for 15 to 20 minutes.
Your pie will be lightly golden on top and look gorgeous.
In you go!
Once your meringue is done baking, serve immediately or chill for up to four hours before serving.
And if you don't want to bake this, you can just torch the meringue instead.
It gives you an even more dramatic look, and it's quite quick.
I baked my meringue and chilled it, but I also want to show you what it looks like when you torch it because it's quite fun and dramatic.
Just a little light torching will give you a lot of contrast.
Now your lemon meringue pie is ready to cut.
Give it a slice, and just like that, it's ready to enjoy.
Zingy, creamy, light, and with this beautiful crisp butter crust—what is not to like?
Hmm.
