- Today, we're making a restaurant-quality dish with
big, bold Indian flavors and the perfect textural balance of crunchy tofu, creamy gravy, and plump, tender peas.
It's called matar tofu, and later in the video, I'll share how you can get the recipe for free from NYT Cooking, where I'm a contributor, but for now, let's get started on our
tofu.
(relaxed music) So, the traditional version of this dish, matar paneer, is made with paneer, which is a type of soft Indian cheese.
To keep things plant-based, we're using a block of extra firm tofu that I've already drained, and I'm just gonna squeeze out a little bit of excess water from the block.
Be gentle though.
You don't wanna break this apart.
Just a light squeeze.
And if a lot of water doesn't come out at this stage, that's totally fine.
Slice the tofu into four slabs lengthwise,
and then from here, you can flip the slabs on their sides, slice them again, and then cut them into 1/4- to 3/4-inch cubes.
The tofu's gonna go in a hot oven for nearly 30 minutes, so it's gonna have plenty of time to dry out, so we don't really need to do a full press.
Instead, I'm just going to pat dry these cubes a few times with this towel.
To season the tofu, we'll hit it with a little bit of oil.
Any neutral-flavored oil, or even olive oil, if you prefer, is fine, and some salt and pepper to season.
Use a silicone spatula to coat the tofu.
And now for our secret weapon, potato starch.
This is gonna help the tofu get extra crispy and crunchy in the oven.
If you don't have it, you can use arrowroot powder, but if you can get potato starch, it works the best.
Add the tofu to a parchment paper-lined sheet pan and then just spread out the tofu pieces.
No touching.
The tofu is ready to go into the oven, but I'm gonna hold off on that for a few minutes so I can start prepping the masala, which is the
creamy gravy base, and that way, the tofu and the masala will be ready at the same time and we can assemble everything together.
(lively music) We'll start our masala off by finally chopping one large onion.
This is a behemoth onion, so I probably won't use it all.
And we'll also finally chop some tomatoes, about a half-pound.
If you can't find
もし
good quality ripe tomatoes, you can use canned crushed tomatoes instead,
but you'll want to use an equal amount, which is about eight ounces, so not the full can.
We have a couple more items for the masala, but we'll have some downtime in a bit to work on those, so I'm gonna pop the tofu into the oven, 425
on the top third rack, and it doesn't need to be flipped or babysat, so we'll have plenty of time to cook our masala.
For the masala, you wanna get a large frying pan over medium heat for a few minutes, and once it's nice and hot, you can add two tablespoons of oil.
First thing that's gonna go in is a whole cinnamon stick.
This is gonna add a nice, subtle, warm, sweet aroma instead of that, like, really intense punch you get from ground cinnamon.
After 30 to 60 seconds, it should smell amazing, and we can go ahead and add the onions.
Pinch of salt.
The onions need at least 10 minutes, if
not
15, to get nicely browned so they can form the base of our masala and make it really delicious, so I'm gonna use that downtime to work on our garlic and ginger.
I've got an inch and a half of fresh ginger.
I've already washed it, so I'm gonna leave the peel on and just grate it into this bowl, and I have to say, this OXO grater is phenomenal for grating ginger.
If you don't have a really good grater for ginger, it is a lot easier if you freeze the ginger first and then grate it.
Don't forget to stir the onions from time to time.
They don't need a ton of babysitting, but they will burn if you completely ignore them.
And six garlic cloves finally chopped.
Put the garlic with its best friend, ginger, and to this mixture, I'm gonna measure out three tablespoons of tomato paste.
This is just gonna add another element of richness and this sweet savoriness that goes really well with the peas.
It's been about 15 minutes for the tofu, so all I'm going to do is transfer it from the top third rack to the bottom third rack.
That's gonna help it bake more evenly without you having to flip it or do any other work.
Once your onions are looking nicely golden brown like this, you can toss in the garlic, ginger, tomato paste.
You wanna stir this almost constantly for about 90 seconds, and that way, we'll toast the tomato paste and cook off the raw garlic-ginger smell.
Now, I've got a blend of ground spices I've already measured out.
This is coriander, cumin, turmeric, and Kashmiri chili powder.
Before we add that in, I'm gonna add a splash of water so nothing sticks.
Whenever you're adding ground spices, you wanna make sure you stir pretty much constantly so they don't burn.
They should take just 30 seconds.
Now, our fresh tomatoes go in,
and you can use any of the liquid from the tomatoes to deglaze all the stuff stuck on the bottom of the pan, and some salt to season,
plus black pepper.
You wanna cook the tomatoes for about five minutes or until they soften and the masala comes together.
So, matar paneer is typically made with heavy cream, maybe whole milk for that creamy richness.
Sometimes it has cashews blended into it for a nuttiness, so my plant-based alternative/shortcut is to use cashew milk.
That way, you get nutty richness without having to get out a blender.
The color is so beautiful.
Within a few minutes, the cashew milk gravy should start to thicken, so now it's time for the matar part of the recipe, the peas.
This is one and a half cups of frozen peas.
Just add them in there straight frozen, no need to defrost them, and they'll warm up within a few minutes.
Peas need just a minute more, but I believe our tofu should be ready.
The tofu is
definitely
a bit crunchier and done than
I would typically make if I were just eating this plain, but since it's going into a creamy sauce, I actually want that to be the case so that it still retains some of that crunch and you get that nice texture contrast.
All right, you can turn the heat to low, and now we have a couple spices that are typically added to a North Indian-style gravy dish like this at the end.
First, garam masala.
It's a blend of sweet, warm spices that have already been toasted, and then kasuri methi, which are dried fenugreek leaves.
These have such a unique aroma.
It's savory, it's earthy, a little bit like fennel, and you wanna always crush them between your fingers first 'cause that releases their aroma.
And you can find these at South Asian grocery stores, spice shops, or online.
Let me pick out this cinnamon stick.
We're done with her.
She has performed excellently.
And our other finishing ingredient is some chopped cilantro.
We're ready to assemble everything, but I'm just gonna do that over by my window so we get some nice natural light for our beauty shots.
(relaxed music) I'm serving this over some leftover rice I have in the fridge.
You could also do some sort of flatbread like naan.
Even store-bought pita, it's gonna be delicious.
The flavors are out of this world.
I love the sweetness of the peas against the heat.
The tofu stays nice and crunchy, but it's got that beautiful creaminess.
