I'm visiting the eye-catching color ramen shop. This eye-catching color ramen shop opened in May 2016 and is located in Nishi Ward, Nagoya. It's a specialty color ramen shop run by Ueda Seimenjo. It's a nuance thing. I think it's a ramen that's like a cross between Nagoya's specialty Taiwan ramen and anchor bust, but I'm also very curious whether a new local ramen has been born from Nagoya. I've had enough of this, so let's go fishing right away

Being able to reproduce that is the beauty of this umami seasoning, or rather, reproducing it, or rather, being able to bring it out.
Of course.
Even just the base soup on its own is delicious enough, but on top of a solid, well-made base soup, using umami seasoning to replenish and further boost the umami — that's another nice thing about it.
When I say umami seasoning, there are actually various kinds, like taste
and harmony, and flavors
that come in many varieties. Each of these has a different umami composition — there's glutamic acid, guanylic acid, inosinic acid, and so on. And it's said that combining these makes it even more delicious. I don't know how much scientific basis there is for this, though.
Things like kombu that contain glutamic acid, and
the acid from pork or bonito — that kind of umami — and when these two are combined, you tend to feel the umami more strongly.
I guess that's what they say. After all, if you take the extreme case of
kombu and bonito being combined, you do feel the umami more strongly and it becomes more delicious. But it's not just about compatibility — like kombu and pork, you know.
Is it really a great match? I don't think it's that much of a great match, you know — ramen is a bit of a mix-and-match thing anyway. But for example, using pork in the base soup while adding bonito for the finishing touch — there are combinations like that. And then adding just a little bit of umami seasoning — the amount really varies from shop to shop. What's the right amount, that sweet spot, you know.
It varies quite a bit depending on the ramen — if you look at ramen broth, it's pretty clear-cut,
isn't it? And then there's ramen broth that's made with bonito, kombu, and umami seasoning.
From tonjiru — pork soup — is probably the one with the biggest umami explosion, you know, adding it right at the end.
That way, you know, bonito dashi and all that — it's like, oh, a slightly elevated soup
is nice too, but depending on the shop,
some shops add niboshi or bonito right at the end. Those shops get a nice aroma rising up, and with that aroma, you also get a fresh,
fresh umami coming out, so it's said to taste even better. Here, even if it's the same soup, first it's the aroma and that live feeling of being prepared right in front of you. Because it expresses that, you might feel the umami even more strongly. Lately, speaking of which, with salt ramen,
like Iida Shoten and all, right before
they say it's delicious — well, of course they make the salt tare, and they combine the salt tare, oil, and soup to make the ramen, but right before
they add what's basically regular salt — just a quick sprinkle — which brings out the salt's flavor more intensely.
There are methods like that too. Adding something right at the end seems to fill in the weaker parts of the soup, I feel. At least that's my impression. Of course, there's also the pattern where it's already in the soy sauce tare. There's also the pattern where umami seasoning is already in the soy sauce tare or salt tare, but the best way to
bring it out is right
at the end, I think. I'm not sure though. I think it's used pretty widely across ramen shops.
It's just that without using umami seasoning, expressing that punchy, powerful umami in ramen broth is really difficult.
So that means you just have to put in a lot of ingredients.
Umami seasoning has done this much for humanity, it's amazing, right? So just sprinkling it on rice with a raw egg makes it super delicious, as expected. In my family home, we didn't have the style of putting Ajinomoto or anything on tamago kake gohan.
I didn't know about that style until I became an adult, and when I tried it, it really did become super delicious. Of course, umami
だから
is what
sprinkles the final touch of umami, so it makes things tastier. But with anything, there's always the issue of overusing it or putting on too much — it doesn't just get tastier the more you add. It's about balance, that kind of quality.
The trick of how to do it is quite difficult, I think. If there's a dish on the table, you don't know when it's the right time to eat it, and you get nervous.
If you don't get permission and reach for it, you might get scolded.
Back in the day, you know,
It's not that kind of shop anymore. There's a legendary copy going around like, 'Did you eat the shelf at a shop that was full of energy?' but now it's not that kind of shop anymore, so well, the shelf
isn't the kind of shop where you'd get angry about eating it, so
there aren't any like that anymore. Now everyday seasonings are the same with ramen eating, but of course, shops recommend certain ways of eating, like kombu shio men, right? First, eat just the kombu shio men noodles, then sprinkle the letters on top and eat those noodles,
and then eat it with the schedule from there. This is like a lifelong experience combined with that kombu shio men,
the product feels complete in a way,
but in the end,
I think it's fine to eat it the way that person finds most delicious and enjoy it. Honestly. Of course, I eat it the way the shop recommends, but if you think this way of eating is better, then doing it that way is best, I think. If you worry too much about how to eat and all sorts of things,
I feel like you end up not being able to enjoy delicious food even when you have it.
Of course, the shop's recommended way of eating, the owner advising that this way is the most delicious, so use that as a reference. You don't have to put takana in the ramen from the very beginning either. Well, I don't do it. I want to enjoy the shop's original taste, but if you've been going to a shop many times and think putting shichimi from the start is the main thing, that's fine too. I think you should just eat it however you like. I don't think you'd care at all about how other people
are eating it. If you worry too much, the world becomes too rigid and perfect, so let's all eat ramen more freely. Yes.
