Like a man with a thousand recipes. Thinking about the ramen menu
It's such an outrageous ingredient lineup you wouldn't think it's a ramen shop's menu

As part of my daily ramen healthy lifestyle that I'm still doing, I went to a ramen cafeteria with a super rich menu run by one of the leading food researchers in the ramen world, and here it is. It's Kitchen Kiraku-san, about a 3-minute walk from Kakuda Hitomi-cho Station
Let me visit. This Kitchen Kiraku-san opened in 2023 and the person behind Kiraku-san is Mr. Sakata, one of the founders of Menya Shichisai, a famous shop representing Tokyo. Of course ramen, but from curry and yakisoba, rice dishes to baked sweets, it's like a food laboratory by Mr. Sakata offering whatever he thinks is delicious without being bound by genre. The signature menu is Inaniwa Chukasoba, a bowl using smooth dry noodles made with the Akita Inaniwa udon method with a silky slurping texture. I want to fully enjoy Mr. Sakata's worldview that transcends the ramen frame, so let's go slurp right away. But

Among shops in Tokyo, shops using homemade noodles have increased quite a lot recently, but Shichisai has been doing hand-made, hand-cut ramen since long before this homemade noodle boom

things like curry or katsudon, and this is also quite popular, it's a shop where you can choose and eat delicious food centered on ramen from so many menu items you can't choose them all. Jimbocho is the nearest station, but you can also walk from Ochanomizu

there are insanely, insanely many menus. I'll consult with Mr. Sakata a bit, and if there's something he wants me to try, I'd like to challenge it if I have room. Separate department. Now, Kitchen Kiraku-san

Mr. Sakata. Thank you so much. The menu is just incredibly huge
All of those are by Mr. Sakata, right? Like online they call him the man with a thousand recipes. He's apparently quite famous. Seriously seriously seriously. When I cook
まず
First
what I value most is the food culture. I see. Rather than thinking of making a product
as an idea, I travel around places, and I'm interested in the local regional cuisine unique to that land
and spreading the old ones
あと
Also
old things
that might disappear, spreading them, and treating them as something new — well, we know them but young people don't, so it's about how to approach young people
In Japan, as something new, right. Exactly, yes. That's how I want to keep the food culture alive
So when I create a product, first it's about that food culture and how I want to carry it on — that comes first
さらに
Furthermore
ingredients come first. Yes yes yes. For example, right now
like a chilled dish using eggplant, yeah. But making a chilled dish with eggplant
it would be delicious even just with garlic dashi, but there's this Middle Eastern eggplant paste called baba ganoush, right right right
It's super popular at my restaurant. Yeah yeah yeah. What if we combine them, eggplant and eggplant should go well together
right? Yes. And combining them
the product is created, yeah yeah yeah. So probably we have a thousand recipes, even more, they just don't really remain in a fixed form
Oh, you also serve fried rice
Yes, fried rice was also popular at our other affiliated restaurants
But I've gotten older and can't quit anymore, at first I could do it after service, that ingredient
to customers at an affordable price. So in my own way, I recreate in my head what I thought was delicious when I ate it
で
And
Well, it's not just adding on my own, I mean I make dashi only from the ingredients, drawing it out from the ingredients, so it's tough. It really is. So much dashi
You probably have to put in a lot of ingredients and such, right
Then
I think it's really hard to make, truly. I have people eat what I myself thought was delicious
We, well, as our restaurant's philosophy
I don't think the restaurant is ours. It's a different
way of thinking. The restaurant belongs to the customers. We're just borrowing the place a bit. We're borrowing the space from the customers
And figuring out what kind of dishes will make the customers who come happy, that's what a restaurant
should originally be. Yeah, yes. It has to be that way. I make this kind of
I can make, of course of course. This is fine, but as for my style
stylish
things like that that would make them happy. Yes yes yes. I want to first think about what I can offer for the customers. Yeah yeah. After all, I'm also on the eating side, I eat quite a lot, so I have the eater's perspective, not just the restaurant's perspective. So that's why I can think from the customers' standpoint. That's another strong point I've found
Strong. Big eater. You're a big eater, and wherever you go you order large portions
Is that right. A big eater. Yeah. I want to eat large portions. Yeah
I can make it on the lower side, but if it's too low

Oh. And it disappeared, so they're happy they can eat it again

That's exactly digging up that food culture and reviving it. And conversely that becomes something new. Really

Good work. Well
I went to -san, and it was delicious
I had Sakata-san's characteristically elegant ramen
Since he makes it with absolutely no additives, the ramen flavor is very easy to understand, he doesn't use umami seasonings and such, so it's not a flavor that hits you in one bite or strikes you directly, but instead, you sharpen your mind, make full use of your five senses, mainly taste and smell, and by sharpening your mind you can taste the flavor of the ingredients. I think a lot of recent ramen is made seeking punch. But of course then the eaters also keep seeking more punch. When you eat Kitchen Kiraku's ramen at such a time, it makes you realize, ah, ramen has this kind of deliciousness too, Sakata-san is in a sense teaching us that through a single bowl, that's my added interpretation. Added interpretation. Of course not, but that's how much
I think it is ramen, really. Ah, but the Inaniwa Chinese soba is delicious. Those noodles, the dried noodles, the throat feel you only get because they're dried, that smooth throat feel while also having a chewy texture. Firm elasticity, those noodles are really delicious. I like them. Well, that ban mian, the mazesoba one
Yeah. The noodles dyed a bit in soy sauce color and the scorched negi oil. The flavor itself is simple, but making something simple is the hardest, so really. And also the yellow curry
When I hear yellow curry I thought he made it as an homage to Niigata's Bus Center
curry, but for Sakata-san, Jimbocho is quite a curry town, but despite being a curry town there's no yellow-type curry, so he made some, something like that. There was apparently a soba shop in Tokyo that served yellow curry, so he recalled that nostalgic taste and made it. Still
the quantity and quality he's eating is at a pretty high level. Probably Sakata-san, like where did you get that idea from, he's likely making full use of such ideas in his ramen
As both a chef and an eater, I thought again that he's a shop owner I can respect
What happened? So that's it
I thought. What happened? So,
Thank you for watching today's video all the way to the end. Yes, today we were at Kitchen Kiraku. Well, it's been a while since I had Sakata-san's ramen, and it really has class. And the fact that it's ramen made with dried noodles is quite interesting, and honestly I'd love to try even more, but there are just so many items on the menu, so I packed in and ate a lot of things I wanted to try, but there are still so many more menu items waiting, so it's a shop where I'd like to try more of Sakata-san's other ramen. Yeah. With that, let me introduce some comments I received from everyone. It's kanpatsu, you know. It's hatsu, you know. It's not patsu. Nobody knows that, you know. In a conversation with my friend from Sendai, about a like in dialect, I...
I had been reading it all as 'kanpatsu irezu ni.' I had always read it that way, and I thought since I was a kid that it was kanpatsu. When I looked it up, well, the phrase 'kanpatsu irezu ni' seems to be a misuse, and actually it's supposed to be 'kan, hatsu wo irezu ni,' like you cut between... what is it, this...
あの
Um,
They say you cut between the 'kan' and the 'hatsu,' between the interval and the hair. I was looking it up, but like 'choufuku,' hasn't that already become common generally? Originally it was 'choufu,' but well, 'choufuku' is easier to say so now...
everyone says 'choufuku, choufuku' and stuff, and like 'yakubusoku' or 'shikii ga takai,' the meaning is different from the original, but since it's been used with that meaning, now that meaning is easier to understand, there are cases like that. And conversely, if you start saying 'kan, hatsu wo irezu' in conversation, people would be like, why are you using that, but still 'kanpatsu irezu' is easier to understand. But it seems 'kanpatsu irezu' is still just being used as is even though it's a misuse. Also, something often mentioned in gourmet contexts is 'shitazutsumi,' it's easy to misread this as 'shitazutsumi,' but the correct reading is 'shitatsuzumi,' and other small details, well, people who care will care, so I need to study Japanese a bit, but the other day, for example, I think it's about the video when I watched Sendai Girls, well, when I talk with local friends, especially when my local friends still talk to me in dialect, well, the dialect just slips out of my mouth. At ramen festivals and such...
At events, I sometimes get to talk with viewers, and people who come from my hometown, or even kids from the same high school as me come, and they talk to me in dialect, you know, it makes me happy, it gives me a sense of relief...
or like, even when I go to rural areas, I can feel that warm support from my hometown, I really like that. Well, I've been in Tokyo since I was 18, right after graduating high school, so according to my hometown friends, my Tsugaru dialect has become kind of like standard Japanese-ish Tsugaru dialect. I can't tell myself, but it's already like that, well, I've been in Tokyo almost as long as I was in my hometown, I came at 18 and this year I'll be 34...
so that's about 16 years...
I've been in Tokyo for about 16 years, so my hometown flavor, especially in language and things I use every day, inevitably fades, but I do have love for my hometown, as you all know. Yes. Well, I think I'll have a chance to go back to Aomori around the end of this year, so at that time I'll probably be spending time with family, but I'd like to go to local ramen shops again if I can. Yes. Mr. Suzuki, good work at the Me-Tele Ramen Festival. This is Ito. Thank you very much. Thank you for taking photos with my sons. At the daytime stage talk, we talked about what is the Asia Cup?

This is the third time it's been held this year, right. Well, to be precise, there was the Pre-Ramen Fes Nagoya, and from there, Me-tele Ramen for 3 times
And this time too, so many people came, thank you very much. Well, this time it was held over a week, so it was nicely spread out, so no single ramen had a 2-hour or 2-hour wait, I think we managed that. So in a sense, it became a ramen fes where you can really enjoy eating ramen. It's the third time this year, but the actual number of visitors hasn't really changed, even though we're extending the schedule
We've been extending it, but from the start the number of visitors itself has been, well, gradually
I guess. It's not like increasing the days brings that many more people. Well, since it's spread out, I think we were able to eat without much crowding. During the event period, it coincided with something like the Asia Cup, some kind of international tournament, and everyone was like that international tournament, that international tournament, but nobody would tell me what international tournament it was. Seriously
で
And
I kept asking what tournament that was

It's such amazing news that they're holding an official tournament. I haven't been able to follow the last couple of tournaments, honestly, but every time there's always some drama, and the Cliffhanger, every time there's a total victory, it gets insanely modified. And also recently, this Cliffhanger itself, do you all know about it, this

You do it, jump over, and the place you jump to is even moving, it's become insane, it's become incredibly difficult. And moreover, with this Cliffhanger, with lactic acid built up in your biceps like this, then the Vertical Limit
