At this long-established shop popular for sashimi yuba (tofu skin), what is important for making yuba
is said to be humidity.
The lower the humidity, the better the yuba film forms, but
with conditions like this year,
it becomes difficult for the yuba to form.
When that happens, well, it takes more time to scoop the yuba, and
if the yuba film isn't firm enough, it ends up being too soft.
When the humidity is high,
the yuba becomes soft,
and it can sometimes lose its shape.
A film is formed when the moisture on the surface evaporates and the components on the surface harden.
In short, it's something that forms when the surface dries out.
If there is less soy milk, the yuba film forms a bit better,
so we make adjustments like that.
