Hey, I'm John Canell, and today I'm in my kitchen.
We're making a decadent, delicious millionaire shortbread.
So let's get started.
First off, the shortbread base.
Preheat your oven to 350.
Line a nine by nine-inch pan with parchment, and grab the bowl of your stand mixer.
So, in the bowl of your stand mixer, we're gonna add one cup or 226 grams of nice, soft, room temperature unsalted butter.
No paper.
To this, I'm adding half a cup or 100 grams of granulated sugar.
The shortbread base isn't actually that sweet.
We have a delicious layer of caramel and some chocolate on top, so this is mostly about the texture.
Okay, perfect.
For contrast, we're adding half a teaspoon of salt.
And honestly, if you're like me and some of my friends, and you like things a little saltier when they're sweet, add an extra little pinch more.
It's your dessert.
If you're extremely sensitive to salt, feel free to add less though.
To subtract that coin, our scale's done.
Grab a stand mixer and a paddle attachment.
Pop your bowl on, and your paddle attachment.
We're gonna mix this on medium-high for about three minutes until it's light and fluffy.
While that mixes, I'm gonna separate one egg.
I only need the yolk for this recipe.
Okay.
よし。
After three minutes, we have a light and fluffy texture here.
It's like a sweet butter cloud.
Before I add anything else, it's a good idea to scrape the bowl down.
This butter got knocked all the way up, so let's knock it back down.
Okay.
よし。
Back to medium-high.
One teaspoon of vanilla.
One lovely egg yolk to provide some structure.
This is nicely mixed.
I'm gonna add two cups or 240 grams of all-purpose flour to this while mixing on low.
But first, let's measure it out.
Using a scale to do this because I want a lovely, nice result.
If you're using a measuring cup, never scoop the flour.
You're going to fluff it up in the canister, sprinkle it in, and level it off.
If you scoop it up, you're packing in so much flour, your recipe is never gonna be right.
Mixing on low, we're gonna gradually add the flour in.
This new mixer has a half speed, and it's like the slowest thing ever, but it's perfect for making cake batters, actually.
Do do do.
Let's scrape the bowl down because there's a lot of butter on the bottom and flour on top.
I scrape the bowl down.
Let's mix it until it's just combined.
You know, shortbread is Scottish, and the reason that it's called shortbread as opposed to short biscuit or short cookie is hilarious.
So the English were taxing the Scottish on biscuits, like cookies, basically.
So they had this recipe, they came up with it, and they called it shortbread because bread was not taxed, and short refers to the texture.
Cookies like shortbread are really like melt in your mouth.
They burst in a buttery way.
They're crisp, buttery, and they like just dissolve.
They're not chewy.
So they called it shortbread to avoid the tax.
Millionaire shortbread is a Scottish continuation, and that's nothing to do with taxes, but it's just even more decadent.
They added caramel, they added chocolate, layered it up, and it became quite popular.
So decadent and millionaire-worthy, this is lovely and mixed.
We're gonna transfer this into our parchment-lined baking dish.
It's so important that you line it completely because the caramel is sticky, and it would really glue this in.
You'd be frustrated.
I want you to be delighted by this recipe, not frustrated.
Transfer this out.
Elegant plop.
Taking just a little bit of flour and flouring my hands lightly, and now I'm gonna press this into an even layer.
With any shortbread base, it's important to not have any gaps.
For example, if you're making lemon bars, which is a totally different recipe, but it has a shortbread base.
If your shortbread base has gaps and cracks in it, the filling will slide down and make the crust float.
It actually still tastes delicious, but it tends to be quite frustrating for the bakers at home.
Here, we don't want the caramel seeping down, so we're gonna create a nice stable foundation.
Just work slowly and pat it out into a nice even layer.
Our shortbread base is ready to go into the oven at 350 for about 22 minutes or until the edges are a light golden color.
While that bakes, we're gonna make our caramel filling.
Our shortbread is gonna be topped with beautiful soft caramel, but do not fret.
This is a very easy one because we have sweetened condensed milk and corn syrup here to help us out.
This is an insurance policy to give a really stable caramel that has less chance of something going wrong.
So into a medium to small pot, we're gonna add one cup or 220 grams of light brown sugar, not the marshmallows that go with it.
The marshmallows help keep your sugar nice and soft.
One fourteen ounce can of sweetened condensed milk.
This is so good with a shot of espresso.
Just this stuff.
It's really delicious.
Add that in and get it all out.

There's two new recipes every week.
Don't miss out.
I'm also adding in a quarter cup of light corn syrup.
This is eighty five grams.
If you're using a scale, I really don't like using measuring cups because it's impossible to get it all out.
Pour it slow because your scale takes a second to catch up.
Perfect.
Half a teaspoon of salt.
And I'm also going to add a half cup of butter, cut into tablespoon sized pieces.
That's a hundred and thirteen grams.
Pop that in.
And now we can take this to the stove top and place it over heat.
We're going to place this over medium heat now.
Make sure you have a whisk ready.
You're going to stir occasionally for about three minutes until the butter is melted, and then you'll be stirring constantly.
And we want to reach two twenty five, which is a really nice soft texture for the caramel.
My butter just melted, so now I'll be stirring constantly for six to ten minutes.
It really depends on your cooktop, though.
And as the butter is melted, I'm at like one thirty, so that extra hundred degrees is going to happen fairly quickly.
Just make sure you keep stirring because you don't want this to burn anywhere, even heat throughout.
My caramel just came to temp, so immediately remove it from heat, and we're going to add the vanilla.
One teaspoon of vanilla goes in now, but be careful because it will bubble up if the caramel is quite hot, which it is.
Stir that in, and it can be set aside until our crust is ready to come out of the oven.
Depending on how you time this, the crust might be out and ready, or just coming out.
My crust just came out of the oven, so let's pour the hot caramel into the hot crust.
Pour that in.
And you can smooth it towards the edge so all the corners are covered in caramel.
Right now, our caramel and shortbread are quite hot, so set these aside until they come to basically room temperature.
Then we can top them with the ganache.
In the meantime, let it hang on the counter top and cool as it pleases.
My millionaire shortbread has just cooled to room temperature, so let's make a lovely ganache to top it out.
Now, I want to point out this is your dessert, so if you love caramel but are not the biggest fan of chocolate, you could just do a light drizzle.
If you love chocolate, you could even increase the amount of ganache.
We're using four ounces of semi-sweet chocolate.
I'm going to give this a chop and mix it with some cream.
In a pinch, you could definitely use semi-sweet chocolate chips instead.
The bar is just going to melt easier and normally it's a higher grade chocolate, which we love.
Line them up and get chopping.
You just want all the chocolate to be roughly the same size and not too large, so it melts easily with the cream.
Okay.
よし。
Let's transfer this to a medium microwave-safe bowl.
We're going to pour a third of a cup of heavy cream over our chocolate, and then this can go either into the microwave or onto a double boiler.
We're going to microwave this on high in twenty-second bursts, stirring in between until it's smooth.
If you see a little piece of chocolate here and there that are not melted, just set it aside, give it a minute, and stir, and the residual heat will melt that chocolate.
You don't want the chocolate to burn by overcooking it.
My ganache is nice and silky smooth, so we're going to pour this over our cooled caramel, and then make a choice.
We're going to give this a smooth now.
Smooth, so everything is covered.
And then you can just give it a little swipe.
You can either set this aside and allow it to chill for two hours until set, or you can top it with some delicious things.
Maybe some flaked sea salt, sprinkle over the top like that for a salty sweet caramel finish.
You could also add some chopped toasted nuts, toffee bits, really anything that you like, chopped pretzels.
List goes on.
Maybe even toasted macadamia nuts.
You know, you could also have taken four ounces of chocolate, caramelized it at a low temp in the oven, poured that on top, and then had macadamia nuts on top.
That would be delicious.
As well.
This needs to go into the fridge for about two hours to set completely.
Then I'll show you how to give it a cut.
Once chilled, remove from the pan and unwrap from the parchment.
For the cleanest slices, warm your knife under some hot water and wipe it off between each cut.
And look at those layers.
Beautiful.
These are, of course, quite rich, so feel free to cut into a smaller size.
They basically become luxury Twixes.
Gooey, indulgent, and you get such a nice taste of this delicious caramel with a nice shortbread and that luxurious chocolate.
I hope you get a chance to make this delicious recipe.
