Today, I'm at a studio somewhere in Tokyo, and we're about to record the theme song for the Susuru Ramen Fes Fukushima that will be held soon, and we've just finished recording the drums and bass, so it's my turn to wait, so I had time to go slurp ramen in between, so I'll quickly eat ramen and come back, and then do vocals and stuff, and today's shop is Tsukemen Back to Back,

It's in the Ichiban-dori shopping street in Musashi-Koyama, so it's quite visible and not that far from the station, so the location is really great.
Well, I want to eat tsukemen, but apparently they recently started ramen too, so I'm curious about that as well.

Thank you for your question.
When the tsukemen shop opened, I saw online it was like 2,000 yen, right?
Ah, yes, that's right.
はい。
Yes.
And I remember it became a bit of a topic, like that's expensive.
Yes, that's right.
Break Beats group shops are often said to have rather bold pricing, but that's because
we source carefully selected ingredients from all over the country, and we serve them here with confidence, and given today's

tough economic situation.
To embody the president's philosophy, we want to maintain a proper staffing system and pay our employees well,
and rather than running at a loss, we make sure to cover costs, and in return use good ingredients to provide good products —
that is the concept of the Break Beats group,
はい。
yes.
That's the most important part.
Using good ingredients, making good food properly, and having customers be satisfied.
I had that special tsukemen this time, and it was really satisfying as expected.
Oh, I'm glad to hear that.
Well, first of all, various things are included, the plate as well as the toppings, and since it's noodles soaked in kombu water with dipping soup, there are about three stages to enjoy it.
That's exactly right.
And when you dip those toppings in it, the flavor changes a bit again.
はい。
Yes.
Also, those two kinds, are they both the so-called hanging roast?
Do you use different methods for them?
They're separate, yes, different cuts of meat,
The one on the noodles was pork shoulder loin, marinated in soy sauce and finished as hanging roast, while the rib roast on the plate
It's marinated in soy sauce, then cooked at low temperature and smoked.
Indeed, it has a stronger smoked flavor, that smokiness.
That's the rib roast, right.
Oh, thank you.
Certainly, the ramen topping was also quite light and refreshing.
And the thickness was just perfect too.
Oh, I'm happy to hear that.
I could eat as many slices as you give me.
We intentionally varied the thickness too, designed to suit the ramen and to suit the tsukemen.
So everything is prepped in-house at the shop.
We have four shops now.
That's right, but the Break Beats group is amazing.
It's been about five years since Break Beats started, right?
That's right.
Five years, huh.
In the fifth year and already with four shops.
That's amazing.
And each shop operates quite independently, doesn't it.
We've made the concept completely different for each, yes, because serving the same thing...
We'd be in trouble if people mistook us for a chain.
For our part, we're not a chain, each shop has its own concept, so regulars of the main shop can go to another Beats and enjoy something different, not the same thing.
So we can create a flow where customers who came to us will next go to another affiliated shop,
And the fact that you can enjoy different flavors at each shop is possible because the cooks and staff have grown so much, and also because the main shop is doing solid work.
The staff have grown so well that they can pull it off.
You're too kind, but it's all thanks to our president's vision.
The equipment is really impressive.
You can lift the noodles, drain them, then immediately plunge them into water, soak them, and tighten them up again.
That whole process is automated.
I was surprised how far in it goes, honestly.
When it comes to investing in equipment, our president
believes in sparing no expense and bringing in anything good, so we can do our work very comfortably.
That's a lot.
Right now this Break Beats group feels like it's running at the forefront of the Tokyo ramen scene, so I'm looking forward to what's next.
I'm really excited to see what new things will come, and how the existing shops in the group will evolve.
Yes, please keep up the good work going forward.
Yes, thank you, likewise.
Yes, thank you very much.
Yes, thank you very much.
Well, I went to Tsukemen Back to Back, and it was delicious.
It's the fourth shop of the Break Beats group,
So, well, the Afro Beats and Jersey Beats up until now were also breakbeats,
but this is yet another different chicken pattern, or there's like a niboshi ramen, and yet it's still very much breakbeats-like, high-quality and cutting-edge, and the plating is also really beautiful, so it's like what you'd call an Instagrammable ramen,
there's that aspect too, but of course their skill is genuinely proven, and while the price inevitably ends up being high, it's a dipping soup packed with umami using a huge amount of shellfish that fully justifies that price.
After all, there's the shellfish umami and the soy sauce flavor is quite prominent too, so it looks light but actually has quite a punch when you eat it.
Well, this time this tsukemen back-to-back's
special-order medium-thick straight noodles, and these noodles use gagome kelp,
kelp water, so they're soaked in this kombu water, so they're delicious even eaten as-is, and by eating them with a bit of special salt, you think, oh, the noodles are good even on their own.
Well, also since I got the special topping this time, there's quite a wide variety of meats.
Well, when it comes to the Break Beats group, it's the Sangenton pork smoked chashu, well, I think this is pretty much the main feature.
This is really amazing, isn't it.
They're sliced quite thin so they're super easy to eat, and the smoky flavor is quite strong, so for people who don't like it, it might be a bit intense,
but I personally really love hanging-roasted or smoked chashu, that kind of meat, since it has that savory aroma, and by eating it together with the dipping soup, it adds another change of flavor to the tsukemen, and also the fried enoki, which is unique to the Break Beats group,
it's like an unusual twist for tsukemen, but the fried oil melts out into the dipping soup adding savoriness, and a light, crisp texture.
That they add that in too.
Well, I think this kind of stuff is pretty familiar for the Break Beats style.
Also personally, the basil dipping soup I added,
well, that's where the owner's cultivated skills really shine, and it has a pretty strong Western nuance, so you can really feel the originality and individuality.
I actually thought this basil one might be the main star.
The manager also really recommended this basil dipping soup, so it's a menu item that's hard for other ramen shops to offer, something the Break Beats group hasn't had before, but it still shows plenty of personality.
Well, this Break Beats group is truly at the cutting edge in Tokyo right now,
so I'm really looking forward to their next development, and once again I felt that all the techniques they've cultivated so far are fully brought together here, and with state-of-the-art equipment in the shop, they're in perfect shape.
Thank you for the meal.
So thank you very much for watching today's video until the end.
Yes, today we went to Tsukemen Back to Back.
Well, lately I feel like there are more and more ramen shops setting relatively high prices, but I think what matters is this sense of satisfaction. If you pay a high price and think 'is this it?', then as a customer some dissatisfaction builds up, but because the price is high, they can use techniques and such that make you think ramen can be this delicious, so I think it can expand the possibilities.
The issue of ramen prices is really, seriously difficult, but I love both expensive ramen and cheap ramen, of course, well, because I love ramen as a whole, I want to support this kind of challenging spirit from Break Beats.
I also want to support this kind of challenging spirit from Break Beats because I love ramen as a whole.
I'm also supported by comments from all of you.
I always start from grandma's room every time.
It's true, it's kind of Japanese-style, if anything, so it's like grandma's room.
And normally, other YouTubers film in much brighter rooms, right?
I wonder, well, the lighting, or rather the room lights aren't that bright, so I am using a light.
This is, well, I'm using this kind of lighting, but apparently the room is a bit dark, so it might have that grandma-like atmosphere.
Well, sometimes on Susuru TV,
Sometimes people from outside, not our staff, come to our office, and they say it feels like a ryokan, like everyone is a bit...
It's not really about the interior, it's just a detached house here, we're renting a house to use, but personally, rather than the so-called bright, shiny, all-glass-windows, high-quality high

I prefer this kind of slightly house-like feel, I find it calming, and our previous office was also like a regular rented house.
Well, that way everyone can gather more easily and it's easier to get things decided.
We might have to move offices again sometime soon, and no, we didn't do anything wrong.
No trouble to the neighbors or anything like that, none at all — saying "none at all" sounds suspicious in reverse, though.
So with absolutely none of that, it looks like we'll have to move, so when that happens I'll introduce the new office on the sub-channel or something, I personally like houses, so I'd like to show you.
Ramen Shop, well, there are surprisingly all over the country,
Also, I went to Yamaguchi Prefecture the other day, and surprisingly there are quite a few Ramen Shops in Yamaguchi.
And Shizuoka also, I have an image that there are surprisingly quite a few Ramen Shops there.
Well, Ramen Shop, there's the Good Morning one near Haneda, and that's like the founding shop, so to speak, and from there it spread all over the country, but there really are in all kinds of places.
Basically, I feel like they're mostly concentrated in northern Kanto, like Tochigi, Gunma, Saitama have quite a lot of Ramen Shops.
So when I find that red Ramen Shop sign on a map, it makes me really happy.
It makes me so happy that I just want to go right in,
It's nationwide, really, they're in so many different places, but surprisingly depending on the prefecture, some people are like "What's Ramen Shop?"
From hearing various stories, I don't think it's as well-known nationwide as it is in northern Kanto, but I personally really love that genre of ramen, Ramen Shop is,
So I want to keep eating at them whenever I find one, and the other day, in Hofu City, Yamaguchi Prefecture, there was a Ramen Shop Tsubaki Touge branch.
Well, this was for a Tsubaki-kei video shoot, but unusually for a Ramen Shop系, they served a slightly cloudy Hakata-style ramen.
I thought that was quite rare, because if it's Ramen Shop, it's usually Ramen Shop style.
A light tonkotsu-shoyu based shoyu flavor, well there's salt too, and some places do miso.
But mostly shoyu and miso are the basic popular menu items, like negi miso ramen, or negi ramen, negi chashu-men are pretty popular.
But quite a few connoisseurs eat tsukemen there.
Also, it depends on the shop, but there's sometimes a menu item called shichimi vinegar ramen.
This, I...
I've never had this myself.
For shichimi vinegar ramen, I basically always end up getting negi chashu-men or negi miso chashu-men.
When I go to Ramen Shop,
I haven't really eaten tsukemen at Ramen Shops at all, so I think there's a lot more to explore, I want to go to even more Ramen Shops across the country, so continuing on, Ramen Shops across the country

When I was pregnant and struggling with morning sickness, I found Susuru-san's YouTube, and I've been watching every day since then, for almost seven years now, thank you Susuru.
I'm from Ota, and the recent Ota ramen videos were very close to my home, I was happy you came to Ota, and all the shops you liked caught my interest and I thought I'd go if I get the chance, I knew all of them and wanted to go, but Susuru

For watching for seven whole years,
I'm surprised myself that I've kept this going for so long, but you know, there are surprisingly many shops like that, right? Like near your own home, places you always hear are crowded or popular or supposedly delicious, but you've surprisingly never actually been to. Even here in Kobe, places that have been around forever but I just haven't gotten to go to, I want to keep visiting those kinds of shops, and while around Tokyo or the Kanto area it inevitably ends up focusing on new shops and such, I've already been to quite a few new shops in the past.
So I'd be really happy if you'd go back and watch my past videos, but when you watch other YouTubers' videos too, when a shop you know, or for example a shop in your hometown, or a shop you like shows up, it makes you really happy, right.
Well, because of that, people sometimes say things like, oh Susuru came so that shop got busy, but even so, I want to keep discovering these famous local shops.
This is also thanks to everyone who regularly comments, I've been able to learn about all kinds of shops, and when you tell me in person when we actually meet, that really encourages me too.
