Oh my gosh, I don't know about this.
Okay.
It was like falling all over itself, like it's falling off.
This is like chaos in a cookie.
Some desserts are perfect.
There are no notes, they're already iconic.
So what happens when you try to take one of those classics and turn it into a cookie?
Chaos.
But it's like falling off.
I mean it looks like a s'more, kind of...
Smoking!
So, today I'm taking a campfire classic, the s'more.
And I'm trying to capture that crunchy, melty, and gooey layer all in the form of a cookie.
To start, we need a solid foundation.
And that's the graham cracker.
It brings toasty sweetness and structure to hold everything together.
Now, I learned in testing that I want something really nice and substantial to hold up to all that marshmallow and chocolate.
So, I'm starting with seven graham crackers.
And I'm just going to break these up and put them in the food processor.
And I'm just going to process until it looks nice and finely ground.
Okay, it's looking good.
Now, a basic graham cracker crust is just graham crackers and melted butter.
I tried that here.
It was kind of crumbly chaos under all the heavy layers.
So, I wanted to add a little more substance to this one.
So, I'm also adding a half cup of flour, which will just give it a little bit of sturdiness.
I'm going to do a quarter cup of light brown sugar, which both adds a little bit of sweetness and it also just gives it a little more crunch.
Quarter cup is one and three quarters ounces.
Okay, so I'm also adding a half teaspoon salt.
This is just a little salty for a gram cracker crust, but I kind of love that.
S'mores are so sweet that they can handle a little bit of salt and it actually does a lot here.
And now I'm going to pulse this just until everything's nice and combined.
Now, a lot of graham cracker crusts use melted butter.
I tried that here, but in this case I think with all those other, again, heavy layers and that chocolate on top, it got a little greasy.
So, I'm actually just using chilled butter.
I'm using eight tablespoons of chilled butter and I'm just going to cut it into rough half-inch pieces.
So, whoop, I'm not throwing it around.
And popping this right in here.
Now, I'm going to pulse this until it looks kind of like wet sand.
Alright,
はい、
so, you can see how it like really does start to lump together and actually form
clumps and now it almost starts to look a little bit like a very crumbly dough, and that is what you're going for.
Let's talk about the pan.
So, this is just an 8 by 8 pan, and I lined it with a foil sling.
So, what that means is I took two piece of foil and I folded them each 8 inches wide and then kind of just working them into the pan, folded them into the corners.
It just gives me a really nice way to lift the bars out at the end.
You can kind of do a little like demo and it's much easier than trying to flip over a bar, especially a particularly messy bar.
Now, s'mores are really quite messy and melty marshmallows are quite sticky.
So, you want to grease this really well.
Kind of like grease the crap out of it.
Kind of like grease the crap out of it.
Alright, and then in goes all of the graham Alright, and then in goes all of the graham cracker crust.
It looks like a good amount of graham cracker crust because it is a good amount of graham cracker crust.
It needs to hold up to those really heavy layers.
So, I'm looking for something quite thick.
Alright, so, I'm just getting this a little cleaned up.
You do want it nice and even, so I try to start it with my hands, but then I go in with the back of a measuring cup.
My oven's set at 425 degrees and I'm looking for it to actually get nice and golden all over.
It'll only take about 13 minutes.
First layer, mostly done.
With the crust behind us, it's time to layer on something rich and melty and essential, the chocolate.
It's that layer that melts into the crust and makes every bite unmistakably s'mores.
Now, I have room my heart for all kinds of chocolate, but I landed on Hershey's for a very specific reason.
I love Tony's, but this is a thick boy.
It's so thick.
I mean, it's kind of fun.
It has this uneven pattern, but actually for a s'mores bar where I want really even coverage, delicious for snacking and not good for a s'mores bar.
Now, then you have something like Endangered Species.
This is a top one in the Test Kitchen.
It's a really delicious milk chocolate bar.
But, as you can see, as I reveal it out of its gold wrapper, it's quite dark.
It actually eats a little bit in between milk and dark chocolate.
Like it has this kind of bitterness to it.
It's again really tasty, fun to snack on, but it doesn't eat like what you think of with the nostalgic s'more flavor.
Now, everyone has their own preferences, and I totally get it.
I think some people don't even like milk chocolate, but I feel like it's hard to argue with the fact that the classic for a s'more is Hershey.
It is really nice and thin, which is great for a s'mores bar.
And it has a really low melting point.
It means it melts really nicely and it actually gets just a little bit soft in a s'mores bar.
Alright, let's grab the crust.
Alright, this is looking good.
It's nice and golden brown all over, and it's firmed up nicely.
It's also puffed just a little bit.
So, I'm just gonna let this cool a little bit and then we'll layer in some chocolate.
Crust is completely cool.
So, now I have six Hershey bars.
I'm gonna take about five of them and layer them in here and kind of just arrange them.
And you want to just break them up as you need just to get pretty even coverage, I think one of the advantages of using Hershey's
here is that they're pretty flat but you still have to do a little puzzling to get these to fit right.
Alright, let me stick this last little piece in here.
Okay, so with my extra bar and any other little bits of one fit, I'm just gonna rough chop these and save these for later for a little garnish for the bars.
So, with our chocolate layer down, we're moving on to the most challenging layer, at least the one that took me the most to get right, the marshmallows.
So, my goal with the marshmallow layer was to have it maintain its structure on the outside of the cookie while also keeping it's gooey texture.
So, for my first test, I tried using marshmallow fluff.
These look beautiful.
I get s'mores energy from these, so it's sticking a little bit to the foil.
Let's go in and cut.
Okay, well, I mean, there's a marshmallow pull.
Oh my gosh, I don't know about this.
Okay.
It's like falling all over itself.
Like, it's falling off.
This is like chaos in a cookie.
Though gooey, the fluff alone didn't provide enough structure to the cookie and end up being a sticky mess.
For my second test, I tried plain ol' marshmallows.
Though they provide more structure, they didn't quite have the gooiness you'd get with a s'more.
Also pro tip, don't burn your marshmallows, unless that's what you're going for.
Okay, I'm going to redo this.
Trust me, all fluff or all big marshmallows doesn't work.
However, a combo of fluff and mini marshmallows worked perfectly.
Right, so the fluff gives that really nice kind of goo factor you think of with the meltiness
of a marshmallow, but the mini marshmallows just contain it and they also give something a brown, so it actually makes it much more like a bar and something you can bring with you to a potluck or a barbecue.
It won't just be like such a total chaotic mess.
Alright, so, I've got my marshmallow layer assembled and these are going back in the oven.
I'm gonna bake them until they're set at the edges and they should be nice and golden brown all over.
They'll take about 15 minutes.
So, while they set, I want to talk to you guys about marshmallow doneness because there's a fine line between toasty and burnt.
We all have that friend who over toast their marshmallow or is impatient, and I definitely used to be that little kid.
So when you have a marshmallow like this, it eats pretty differently than when you have a perfectly toasted marshmallow that has this nice golden bronze crust.
You have all this caramelization out here, and when you actually go to eat it, you're sloughing off just an outside shell layer.
It's such a specific flavor, like a burnt marshmallow.
It tastes a little carbonized, it tastes pretty bitter.
I don't hate it, but it's just not what you want for a s'mores bar, and it's not going to have that same subtle, like, sweetness.
And it's just not as pretty.
Now, in comparison, just trying to get it nice and even.
It takes a little more patience.
This is a lot more mild.
It just tastes like caramel as opposed to something burnt.
It is really pretty on top of a s'mores bar, and it just like it doesn't have that same leatheriness as the other one.
It smells like we're sitting around a campfire.
Like that sort of smell you get when you toast marshmallows.
That's kind of what it smells like in here, and that's a good cue that you know you need to go check your s'mores bars.
Alright, I'm gonna let this cool.
I'm gonna sprinkle with that leftover chocolate first though.
Just gonna sprinkle this just sort of as a nod so people know exactly what they're eating.
Since these are so warm, that chocolate's gonna melt in just a little bit, but it'll be a clear clue for people that they're eating a s'mores bar.
These do need to set for four hours, which is potentially the hardest part of this recipe.
But, if you cut them too early, they'll be kind of chaotic.
And you get really nice clean bars if you let them set the full four hours.
It's been four hours.
It's the moment of truth.
Now, I'm gonna use the foil sling.
See how you easy this is to pull it right out?
Okay, before I get too deep in these, I do want to do a little throw.
That's how you guys.
If you like cookies as much as I do, we do have this book out.
It's called The New Cookie.
It has a really fun, innovative flavor.
So, there's stuff like the s'mores bar.
There's also a salted, melted chocolate chunk cookie.
There's a mango lassi bar.
It's some really fun stuff.
So, check it out if you're into cookies.
But let's focus on this cookie.
I need to spray my knife with just a little vegetable oil spray.
Now, I'm just gonna peel back any marshmallow thats sticking I mean, they look really fun.
It's been a journey, but we are here at the moment of truth.
You can see that there is like a distinct Graham layer.
There's a milk chocolate layer.
There is a marshmallow layer.
There's a nice toastiness.
And then it also is holding up as a bar.
I mean, this is not a chaotic mess.
It just looks, you know, you could take this to a party.
I'm just gonna cut it into about 16 bars.
I mean, you can hear that nice graham cracker crunch.
It's very satisfying.
It's time to eat it.
It tastes like a s'more.
It's got a lot of flavor.
You get plenty of that nostalgic milk chocolate.
It's just really fun.
It's a really fun bar cookie.
